Some recipes are born out of careful planning. These sliders were born out of “what if we just kept going?”

Classic sloppy joes are already messy, comforting, and deeply nostalgic. But then chipotle shows up with its smoky heat. Then Havarti decides to melt into an aggressively silky cheese sauce. And just when you think we’ve crossed the line, caramelized jalapeños roll – sweet, spicy, and absolutely not here to behave.

These Chipotle Sloppy Joe Sliders are rich, smoky, drippy, and a little bit unhinged in the way the best party or comfort food always is. They’re perfect for game day, casual gatherings, or feeding people you want to impress without looking like you tried too hard.

I’ve loved sloppy joes since I can remember – the tomato saucy version with cheese and raw diced onions. I started craving them a few days ago and decided it was time for me to make a brand new version.

Another sloppy Joes Dixie Chik Cooks style.

It exceeded my expectations. Yes, they are spicy, but you can control the heat by de-seeding the jalapeños and reducing the amount of chipotle adobo sauce (a little goes a long way). Add some of the actual adobo peppers from the chipotle sauce if you’re wanting more of the heat.

I happen to like my mouth being just a tad on fire. My husband so doesn’t get that, but I don’t get him either – like why he feels the need to clean my laptop screen every time he uses it. I mean, it’s just a little dust.

  • Chipotle brings structure to the chaos. Smoky heat gives sloppy joes some backbone so they don’t just taste sweet and saucy. 
  • Havarti is the right kind of extra. It melts like a dream, stays creamy, and doesn’t fight the beef or spice. 
  • Caramelized jalapeños change the game. Cooking them tames the heat and brings out a subtle sweetness that plays beautifully with the chipotle. 
  • Sliders keep it fun. Smaller size = maximum indulgence without full commitment (or at least that’s what we tell ourselves). 
  • Texture matters. Saucy beef + silky cheese + soft buns + jammy peppers = no dead bites.

Make It Your Own (For the Defiant Among Us)

  • Too spicy? Use poblano peppers instead of jalapeños, or skip the chipotle and use smoked paprika for a gentler vibe. 
  • Not spicy enough? Add adobo sauce and chopped chipotle peppers, or finish with a drizzle of hot honey. 
  • No Havarti? Fontina, young Gouda, or even white American will melt beautifully and still feel luxurious. 
  • Feeling chaotic-neutral? Add a swipe of garlic butter to the buns before toasting. 
  • Want crunch? Pickled red onions or shredded cabbage slaw on top adds a sharp contrast. 
  • Going full feral? Bacon. Crispy onions. Or both. I won’t stop you.

Chipotle Sloppy Joe Sliders with Havarti Cheese Sauce and Caramelized Jalapenos

Yield: 8 sliders

These chipotle sloppy joe sliders are loaded with smoky beef, a drippy Havarti cheese sauce, and caramelized jalapeños for sweet heat in every bite.

Ingredients

  • 1 lb ground round
  • 1 tbsp seasoned salt
  • 2 tbsp adobo sauce from canned chipotle peppers (you could add some chopped peppers if you want it hotter)
  • 3 jalapeno peppers, washed and sliced into discs
  • 1 tbsp olive oil
  • 1 tbsp coarse salt
  • ¼ cup ketchup
  • 2 tbsp butter
  • 2 tbsp flour
  • ¾ cup whole milk
  • 7 oz Havarti cheese, diced
  • 8 slider buns

Instructions

  1. Brown the ground round over medium heat, drain the fat.
  2. Add adobo sauce and ketchup, stir until bubbly, reduce to low and cover. Simmer for about 5 minutes.
  3. To a saute pan, add the olive oil and peppers over medium-low heat. Sprinkle with salt. Saute until caramelized, about 10-15 minutes. Add a little water if it gets too dry.
  4. For the cheese sauce, melt butter in a sauce pan over medium heat, and when it starts to bubble a little bit add flour and whisk until thick.
  5. Add milk and cheese, reduce to medium-low. Whisk until melted and thick.
  6. Serve beef on slider buns topped with cheese sauce and jalapenos.
