Baking is where cooking gets precise. And where the magic happens. This category collects everything that comes out of my oven: breads, brownies, cookies, cakes, pies, and all the from-scratch baked goods that make a house smell like somebody loves you.

I’m a self-taught baker, which I consider good news for you: everything here has been figured out the hard way, tested, flopped, adjusted, and perfected in a regular home kitchen with regular equipment. No stand mixer worship, no impossible techniques. Just clear instructions and the little tips that make the difference between “pretty good” and “who MADE this?”

A few things I believe about baking: real butter always, weigh your flour if you can (or at least fluff and spoon it. Packed flour is the silent killer of baked goods), room temperature eggs matter more than you think, and your oven is probably lying to you about its temperature, so get a cheap oven thermometer and know the truth.
