Fire up the grill. This is my favorite way to cook, full stop. There’s something about cooking over flame that makes everything taste better and every dinner feel like an event. This category is my complete grilling collection, and it runs deep.
I don’t just casually grill. I’ve competed at the World Food Championships in steak and burgers, so when I tell you these recipes have been battle-tested, I mean it literally. You’ll find Beer Can Chicken, Kahlua Chicken, competition-worthy steaks, my beloved burgers (obviously), grilled seafood, vegetables with gorgeous char, and even grilled fruit. If you’ve never had a grilled peach, we’re fixing that today.
These recipes come with the details that separate good grilling from great: two-zone fire setups, when to sear hot and fast versus cook low and slow, why you need to stop pressing on your burgers (please. The juice you’re squeezing out is the flavor), how long meat should rest, and the marinades and rubs that do the heavy lifting.
Charcoal or gas? I love you either way. The best grill is the one you’ll actually light.
