I know it’s a mouthful.
But, OH.MY.WORD.
This thing is crazy. Crazy as in good crazy.
I used already cooked and Farm Rich Pulled Beef Brisket, but just altered the flavor a bit. It’s already in a sweet and smoky BBQ sauce, which is perfect for sandwiches or salads, but I have to go and make things complicated.
What can I say? That’s my style. I added chipotle peppers and lots of lime juice before reheating it to give it a kick.
So, let’s talk about that cheese sauce.
Have I expressed to you what a harmonious union beer and cheese are? If I haven’t, I’ll go ahead and tell you now. They were meant to be married. This cheese sauce is off the charts amazing. Why Modelo? Well, that’s because my brother left one in my fridge and I felt the need to experiment. That’s basically what happened.
And it worked.
Like a beautiful, delicious little charm.
This isn’t your regular cheese sauce; it has a backbone, character and lots of depth.
As far as the brussels sprouts topping, just trust me here. It’s nice and buttery, a little crunchy, and adds a dimension that this extremely flavorful sandwich needs to round it all out.

Ingredients
- 2 cups Farm Rich Pulled Beef Brisket
- 1 lime, juiced
- 2 tbsp sauce from canned chipotle peppers (found on International aisle)
- French bread, sliced, buttered and toasted
- 1/2 stick salted butter
- 2 cups brussels sprouts, cooked and chopped
- 1/2 yellow onion, diced
- 1/2 green bell pepper, diced
- 1 tbsp salt
- 1/2 stick salted butter
- 1/2 cup whole milk, plus more if needed
- 2 tbsp AP flour
- 2 tbsp whole cream
- 2 cups sharp cheddar cheese, shredded
- 1 tbsp seasoned salt
- 1 tsp red pepper flakes
- 1/2 cup Modelo Negra beer
Instructions
- Combine brisket, lime juice and chipotle together and microwave on high for 2 minutes.
- In a small sauce pan, add butter over medium heat until melted, then add rest of ingredients.
- Saute, stirring constantly, until slightly golden brown and remove from heat.
- Melt butter over medium heat in a medium sized sauce pan.
- Combine milk and flour, whisking to combine; add to butter and whisk until starting to thicken.
- Add whole cream, cheese, salt and pepper flakes, whisk to combine - add more milk if it's getting too thick.
- Add beer, combine and stir until desired consistency.
- Remove from heat.
- Serve brisket on french toast slices topped with brussels sprouts topping and cheese sauce.
- Enjoy.
