How often have I featured a dressing or a condiment? If I have, I’ve since forgotten.

That should indicate to you that this is the bomb.com.

How to Enjoy Honey Key Lime Dressing

Ok, so yes, I made a fantastic chicken taco salad (in a tortilla bowl) that I may or may not have planned on showing off in this post.

Although that recipe isn’t ready for this post, I wanted to show you the dressing’s versatility.

This salad is fantastic; I made some grilled chicken, slow cooked beans, homemade guacamole, pico de gallo, etc. The flavors are crazy good with the Honey Key Lime Dressing. I almost forgot to mention that there are freshly pickled jalapeños on that salad. That would be like almost forgetting my children! They are there and contribute so much to this salad. 

Today, however, it’s all about this dressing, which happens to really make just about anything magical. You can use this dressing as a marinade for chicken, pork or beef, even veggies. This also makes a great dip for french fries, raw veggies, or to add to a charcuterie board.

I rarely see key limes, but a few days ago they were so cheap at one of our local markets, like ridiculously cheap. And, whaddayaknow. I happened to be craving Mexican.

I know, shocker.

Key limes are slightly different from regular, or Persian, limes. Although named and associated with the Florida Keys, they’re actually native to Southeast Asia. They are also called West Indian Lime, Mexican Lime, and bartender’s lime. Key limes are smaller and much more aromatic than Persian limes. As a matter of fact, the Persian lime is a hybrid cultivated from Key limes and lemons.

The Key limes have thinner skin than Persian limes and also have more seeds. Their flavor is a little less acidic than the Persian variety. If you were to substitute Persian limes for Key limes in your Key Lime Pie, your taste testers would most likely notice.

Within two days of buying them, these cute little things have been squeezed into guacamole, salsa, pico, right on top of salads, and just about anything that won’t sit still. Now this lovely, bright, citrusy-yet-so-unapologetically-delicious-that-you-can’t-help-but-to-pour-some-on-your-finger dressing was born from the cute little things.

Even after pouring it on your salad. Or your whatever.

Honey Key Lime Dressing

Honey Key Lime Dressing

Honey Key Lime Dressing

Yield: Roughly 3/4 cup
Prep Time: 10 minutes
Total Time: 10 minutes

Ingredients

  • ¼ cup olive oil
  • ¼ cup key lime juice, (about 4-5 limes depending on size)
  • 2 tbsp honey
  • 1 tsp Dijon mustard
  • 1 tsp garlic powder

Instructions

  1. Combine all ingredients in a container or jar.
  2. Shake thoroughly to combine.
  3. Refrigerate until ready to serve.

Notes

Keep refrigerated.
