Ingredients
Brownie Batter
- ¾ cup unsalted butter, melted
- 1 ½ cups fine granulated sugar
- 1 cup semisweet or dark chocolate
- 1 tsp vanilla extract
- 3 large eggs
- ½ cup unsweetened cocoa powder
- ¾ cup all purpose flour
- ½ tsp Kosher salt
- ½ cup chocolate chips
Pistachio Kataifi Filling
- â…“ cup butter
- 1 ½ cups Kataifi pastry, crushed or broken up
- 1 cup Pistachio cream (or Pistachio butter in a pinch)
- 2 tbsp tahini paste
- Pinch of Kosher salt
Chocolate Ganache
- 1 â…“ cup chopped milk chocolate
- ½ cup heavy cream
Instructions
Make the brownie batter
- Preheat the oven to 350 F. Line a 9 inch baking pan with parchment paper, overlaying two sheets so all 4 sides of the pan are covered and you can lift the brownies out of the pan when done.
- Combine the butter, sugar and chocolate in a microwave-safe bowl and heat in 30 second intervals, stirring in between, until melted and smooth.
- Transfer butter mixture to your stand mixer bowl with the paddle attachment and add vanilla and eggs, one at a time, with the mixer on low.
- Add the cocoa, flour and salt with the mixer still on low, until all ingredients are incorporated.Â
- Fold in chocolate chips.
- Pour brownie batter into prepared pan and bake for 35-40 minutes, until a toothpick comes out clean. Remove from oven and cool on wire rack.
Pistachio Kataifi layer
- Add butter to a large frying pan over medium heat.
- Add Kataifi to the pan and stir to coat with butter, continuing to stir to make sure the Kataifi is evenly toasted - about 7-10 minutes total. Remove from heat.
- Add pistachio cream, tahini and salt, fold to combine.
Make the ganache
- Warm the heavy cream, but do not boil.
- Pour the heavy cream over the chocolate, combine and let sit for 1-2 minutes to allow the chocolate to soften.
- Stir until the ganache is smooth.Â
Assemble
- Once the brownies have cooled, spread the pistachio layer on top, covering the entire surface to the edges.
- Pour the ganache on top of pistachio layer and smooth with a spatula.
