It’s summertime – and as you all know it’s my very, very favorite time of year. When I was a kid it was always my favorite because my birthday is in July.
Now, it’s simply because I hate, hate cold weather. It makes me absolutely miserable, and I don’t like the short days and early evenings.
On another note, this year, my family made my birthday so very special, which was yesterday. First of all, my kids bought me a dress. Yes, my teens. My daughter made note of it while the two of us were internet-window-shopping one night.

And, yes, I’m so very short.
I did end up changing into gym shorts and a t-shirt because I was cooking and couldn’t take two steps across the kitchen floor without almost tripping and breaking my damn neck. It does NOT change the fact that I absolutely love this dress and my next lunch or dinner (or whatever) date I definitely plan to wear it (with espadrilles)!
I was so touched by their gift – oh and a homemade card, which is always the best!

They gave me a very special birthday.
My favorite part was everybody being together and, of course, eating. My cousin (should be my sister), Meighan of The Meighan Project (check out her blog; it’s awesome and so inspiring), her fiancé Ben, and many of Katelyn’s friends hung out with us (friends not pictured), ate and laughed and I enjoyed it so much.
When it comes to summertime, what do you think of? Vacation, lazy days, sun kissed cheeks come to mind, as well as swimming, ice cream, grill outs, and milkshakes.
I mean, why not?
This was my first time to make homemade ice cream using eggs. I typically make my ice cream with whole cream, sugar, etc. without the eggs.
However, I’ve been wanting to try out a hard core version of homemade ice cream, and I decided to try Brown Eyed Baker’s Mint Chocolate Chip Ice Cream recipe.
As much as I don’t have an affinity for sweets, this was a great recipe. The kids absolutely LOVED the ice cream.
What is a Boozy Mint Chocolate Chip Root Beer Float?
This lovely little shake/cocktail is a combination of fantastic homemade mint chocolate chip ice cream, Pinnacle Whipped Vodka, Diet Barq’s Root Beer, whipped cream, and a lovely cherry on top. Or two.
Let’s not forget the sprinkles.
If you don’t want to actually make the ice cream, of course store bought Mint Chocolate Chip will definitely work. My kids have always liked Blue Bell and Breyer’s.
Oh, and BTW a few years ago I made this White Chocolate White Russian made with Pinnacle Whipped Vodka that was amazing. It has been one of my most popular recipes since I started this itty bitty teeny tiny blog. You need to check it out. Speaking of vodka, my recipe for this float calls for 2 ounces of vodka. If you want to cut that back to 1, or even less, feel free to.
How Do I Make a Kid-Friendly Boozy Mint Chocolate Chip Root Beer Float?
Of course, like I did with my children’s floats, just omit the vodka and it’s no longer “Boozy”.

Boozy Mint Chocolate Chip Root Beer Float - Oh, And I Just Turned 21!
Mint Chocolate Chip Ice Cream meets vodka cocktail meets root beer. It's the most delicious boozy dessert you'll ever have!
Ingredients
- This recipe for Mint Chocolate Chip Ice Cream* (for 4 servings use 1 regular ice cream scoop each)
- 2 oz. Pinnacle Whipped Vodka
- Diet Root Beer (or feel free to use regular root beer, but that's what I used)
- Whipped cream
- 8 Maraschino cherries
- Sprinkles
Instructions
- Make the ice cream according to directions.
- Place one scoop into a glass, add vodka, then pour root beer until the glass is full.
- Top with whipped cream, two cherries and sprinkles.
- Serve.
Notes
* Of course, you could also use store bought Mint Chocolate Chip ice cream.
