These fudgy strawberry blondies are made with fresh strawberry purée and white chocolate, then topped with a creamy white chocolate strawberry ganache.
If you’ve ever eaten a strawberry dessert that tasted more like a bottle of strawberry flavoring than an actual strawberry, we’re about to fix that.
These Strawberry Blondies are made with real, fresh strawberries that are cooked down until they’re thick and intensely fruity, then folded into a buttery white chocolate blondie batter. The result is soft, fudgy, and packed with genuine strawberry flavor – not the vaguely pink, vaguely strawberry situation that too many strawberry desserts seem so often to be.
And because apparently fresh strawberries weren’t enough, I topped the whole thing with a white chocolate strawberry ganache that sets into the prettiest soft pink layer.
Yeah. These are a problem.
Why These Are Strawberry Blondies
Let’s clear this up first because the internet has apparently decided that every pink baked good needs to be called a strawberry brownie.
These are blondies.
A traditional brownie gets its chocolate character from cocoa powder and/or chocolate. A blondie has the same general dense, chewy, rich texture without the cocoa-heavy chocolate base. Mine swaps the usual chocolate profile for fresh strawberries and white chocolate, which makes them a little lighter in flavor while still giving you that wonderfully fudgy brownie-like texture.
They’re somewhere between a very moist cake and a fudgy brownie, but they’re definitely not cakey.
And that’s exactly what I wanted.
The Secret To Big Strawberry Flavor
The most important step in this recipe happens before you make the batter.
You’ll start with 16 ounces of fresh strawberries. Purée them in a food processor (or blender), then cook the purée over low heat until you’ve reduced it to about ¾ cup.
You aren’t just trying to make strawberry sauce here. You’re concentrating the flavor and removing a significant amount of water. As the purée cooks down, it becomes darker, thicker, and much more intensely strawberry-flavored. That concentrated purée gets folded right into the blondie batter, so the strawberry flavor isn’t merely sitting on the surface, it runs throughout every bite.
I took these to work after making them, and the reaction was exactly what I was hoping for. They could tell there was a difference between these and typical strawberry-flavored dessert type bars. There was real strawberry flavor in the blondies, and it tasted fresh. They also said these aren’t super-make-your-stomach-ache-sweet.
And I really like that.
White Chocolate and Strawberries Are Ridiculously Good Together
White chocolate is a perfect partner for strawberries because it’s sweet, creamy, and rich without competing with the fruit the way dark or semisweet chocolate can. There’s a full cup of chopped white chocolate in the blondie batter, so you get little pockets of creamy white chocolate throughout the strawberry base.
Then I went ahead and added even more in the form of the ganache.
Because restraint is overrated and white chocolate is delicious.
That White Chocolate Strawberry Ganache
The ganache is ridiculously simple: white chocolate, a little heavy cream, and a tablespoon of that same reduced strawberry purée. Warm the cream and strawberry purée together, pour them over the white chocolate, and stir until smooth.
That’s it.
It creates a soft, creamy layer that sets beautifully without becoming thick like frosting. It’s also a slightly lighter pink than the blondies, which makes the whole thing insanely pretty. And because we’re using the concentrated strawberry purée here, the ganache actually tastes like strawberry too.
I strongly recommend using fresh strawberries for this recipe.
I have not tested frozen strawberries, but I would not make a straight substitution. Frozen strawberries release considerably more moisture as they thaw, and moisture is particularly important here because the strawberries are intentionally reduced before being added to the batter.
The addition of water from thawed berries could change both the texture and baking time.
So for these blondies, fresh is the way to go.
I recommend baking these in a metal 8×8-inch pan. Although a glass pan will work, glass and metal conduct heat differently, so you may get a somewhat different texture and baking result. Since these blondies are all about that soft, fudgy center, I prefer metal for this recipe. I sprayed my pan before adding the batter and added a layer of parchment paper so all I had to do is lift it out of the pan when it cooled.
How To Make Strawberry Blondies
Start by preparing the strawberry purée. Process the fresh strawberries until smooth, then cook the purée over medium-low to low heat until it has reduced to approximately ¾ cup and is noticeably darker and thicker. Let it cool before adding it to the batter.
Using a stand mixer, cream the butter and sugar together until well combined. Add the eggs and mix, followed by the cooled strawberry purée. You’ll then add the chopped white chocolate, then the flour and salt. Mix just until the flour is incorporated. Don’t go crazy with the mixer once the flour goes in – we’re making blondies so we don’t need a super stiff batter.
Spread the batter into a prepared 8×8-inch metal pan and bake at 350°F for approximately 30–35 minutes. The center should be set but still soft. Remember, we’re looking for that fudgy texture, not a dry, cakey bar.
Let the blondies cool completely before making and spreading the ganache over the top and popping them in the fridge. Once the ganache has set, slice them up and try to act like you’re only going to eat one.

I recommend fresh strawberries for this recipe. Frozen strawberries contain additional released moisture after thawing, and I haven’t tested the recipe using frozen berries. Because the strawberry purée is reduced to a specific amount before being incorporated into the batter, fresh strawberries give you the most predictable result.
Can I bake these in a glass pan?
Yes, but I recommend a metal 8×8-inch pan for the best texture – go here to get the one I use. Glass heats differently from metal, so the finished blondies may have a somewhat different texture and baking time.
Can I use white chocolate chips?
Yes. Chopped white chocolate or good-quality white chocolate chips can both work. If using a bar of white chocolate, chop it fairly small so the pieces distribute throughout the batter. Make sure you see cocoa butter in the ingredients or it’s not real white chocolate.
Why do I need to reduce the strawberry purée?
Fresh strawberries contain a lot of water. Reducing the purée concentrates the strawberry flavor while cooking off excess moisture. It also gives you a much more intensely fruity strawberry flavor in the finished blondies.
How should I store Strawberry Blondies?
Store the cooled blondies in an airtight container at room temperature for a couple of days or refrigerate them for longer storage. If refrigerated, allow them to come closer to room temperature before serving for the best texture.
Can I make these without the ganache?

- 1 tbsp heavy cream

Instructions
Strawberry Puree
- Add strawberries to a food processor and puree, or dice small.
- Add puree to a medium size sauce pan over medium high heat and bring to a boil, reduce heat to low and simmer, reducing until it's darker and thicker, about ¾ cup.
Strawberry Blondies
- Preheat oven to 350°F.
- Cream butter and sugar together in a stand mixer using the paddle mixer.
- Add eggs.
- Add strawberry purée.
- Add flour and salt, followed by chopped white chocolate.
- Spread into prepared 8×8" or 9x9" pan*.
- Bake 35–490 minutes until a toothpick comes out clean. If it's still not clean at 40 minutes, continue baking and check every 5 min until done.
White Chocolate Strawberry Ganache
- Warm the puree and cream in microwave or on stove until. hot, then pour over the chocolate.
- Stir until chocolate is completely melted and pour over blondies.
- Cover with plastic wrap and place in fridge for at least 2 hours.
