Pineapple guacamole is a sweet and tangy twist on classic guac! Fresh pineapple, creamy avocado, and a hint of lime make it the perfect dip for summer parties, tacos, or margarita night.
I love all kinds of guacamole.
I especially love going to the Mexican restaurants and have them make it at your table (tableside guacamole <— apparently it’s a thing.)
Because then you know it’s made the way you want it. I really like that because I typically – ok, always – have to “doctor it up” once it’s brought to the table. There’s never enough lime, cilantro or salt, in my opinion.
Now, this guacamole is over the top. As in over the top delicious.
What Is Pineapple Guacamole?
Pineapple Guacamole is made very similarly to traditional guacamole with the addition of crushed pineapple and a little pineapple juice. It adds a little bit of sweetness that works so well with the other ingredients, as well as brightening it up.
I really pondered the decision about adding diced tomatoes, but after tasting with and without, it definitely benefits from it. I typically like tomatoes in guacamole anyway because it adds a little bit of a contrast along with adding freshness.
It just balances it all out.
I, personally, would have added more jalapeños. I know, I always say that – but it’s the truth.
Sometimes it seems like I’m surrounded by people that don’t like heat. Ok, well, Katelyn does. Baby girl is becoming more and more like her mama.
I can imagine putting this on a burger topped with some queso dip and caramelized jalapeños.
Oh, dear – now I have to do that.
Soon.
Like, very soon.

Adding pineapple to guac has never crossed my mine. It sounds delicious!
OMG. I’m dying. In Italy ONE avocado cost about 4 euros… 7dollars. I’m totally trying this the minute I’m stateside!
Thanks Madaline!
The Pineapple Guacamole is pure genius. While the Beef Enchilada Lasagna does seem to have aphrodisiac qualities to it … Oh hell, never mind! I gave up being a perv for one week and it’s killing me! (The Beef Enchilada Lasagna looks mighty fine.)
Adam, you’re too much.
I never thought of adding fruits to guacamole, it’s a good idea!
