Can I teach you something?
I want to talk to you about making guacamole. I have a friend that recently told me it was intimidating, and if you feel that way I want to change your mind.
Making guacamole at home isn’t difficult – The main key is using the freshest ingredients and picking out the perfect avocados.
Your avocados should be dark and slightly soft to the touch (see above). Not too soft, though!
You want them to yield to gentle pressure. If they’re too ripe, you’ll get avocado mush that’s brown – not good. You also need additional fresh ingredients – fresh limes, tomatoes (in season or canned tomatoes), fresh jalapenos, onion, good sea or kosher salt and cilantro to make a good base guacamole. The lime juice acts as an “activator” for the avocado; it essentially balances out the butteriness.
The jalapenos give it a nice little spicy kick, so you can add as much as you want depending on your heat tolerance.
Another thing I want to stress is that after you cut the avocado, please, please, please squeeze some lime juice on it if you want to save it in the fridge before you throw it in the ziplock bag. If you don’t have limes, use lemon or any citrus you have on hand. It will preserve your avocado and keep it from ripening further while it’s in the fridge and

Salsa Verde Guacamole. It just doesn’t get much better than this, kids.
Making guacamole isn’t rocket science; anyone can do it. Pick fresh avocados and lots of fresh ingredients to incorporate with to make your own epic guacamole.
