- Ready in about an hour
- No grill required
- The cool slaw balances the spicy buffalo sauce
- Perfect for game day, cookouts, or easy weeknight dinners
Why This Recipe Works
This burger works because every component serves a purpose. The beef and blue cheese create a rich, savory foundation while the buffalo sauce adds tangy heat. The creamy jalapeño slaw cools things down and adds crunch, keeping the burger from feeling overly heavy. Toasting the brioche buns in the skillet ties everything together with buttery flavor and crispy edges.
Ingredient Notes
Ground Beef – An 80/20 blend delivers the best flavor and juiciness.
Blue Cheese – Mixing some into the burger and adding more on top creates layers of flavor instead of just a garnish.
Buffalo Sauce – Use your favorite bottled buffalo sauce or homemade.
Brioche Buns – Soft, buttery brioche buns hold up beautifully against the juicy burger and buffalo sauce.
Jalapeño Slaw – The creamy slaw adds texture and freshness without overpowering the burger.
Tips for the Best Buffalo Burgers
- Don’t overwork the meat mixture; it will make the burgers tough.
- Use room-temperature blue cheese for easier mixing.
- Toast the buns in the skillet for maximum flavor.
- Add buffalo sauce after cooking to prevent burning.
- Let burgers rest a few minutes before assembling.
Variations
Make It Spicier – Add diced jalapeños directly to the burger mixture.
Add Bacon – Crispy bacon pairs perfectly with the blue cheese.
Swap the Cheese – Try crumbled gorgonzola or sharp cheddar.
Lighten It Up – Use ground turkey and reduced-fat mayo in the slaw.

While I enjoy a grilled burger, the ones from the griddle or cast iron skillet are bitchin’ in their own right. Good job, Shea. This looks outstanding.
Thanks Adam! I happen to LOVE burgers in my cast iron skillet – and I sop up all the leftover goodness with the buns.
