Smoked Turkey Charcuterie Board

My Smoked Turkey Charcuterie Board is what appetizer lovers’ dreams are made of. This board is perfect for entertaining your guests before dinner (many guests to one board so they don’t get too full), and also perfect for a light dinner for two. It’s also a great way to use those turkey leftovers. This is fun to put together, and you can make it your own by using your favorite meats, cheeses, spreads, etc.

Recently, I was invited to participate in Frick’s Blogger Recipe Challenge.  

If you’re not familiar, Frick’s products are “only the finest handpicked cuts of meat, cured with real cane sugar and slow roasted in small batches over American hardwood“.

This is some seriously good meat.

There are three categories in this competition – Appetizer, Center of the Plate, and On the Grill. I decided to participate in all three.

This post will highlight my favorite one, and highlight another.

Bone In Ham – This is one big hardwood smoked hunk of juicy ham that is perfect for any holiday or family gathering.

You’ll absolutely love the leftovers.

Applewood Boneless Ham – Pre-sliced, ready to eat, and fits perfectly on an appetizer platter.

The flavor of this ham is outstanding. Chop it up for casseroles or dips, keep the slices on hand for easy sandwich making, or just snack on it.

Smoked Turkey Drums – This one is fun. Big enough for four to snack on, these turkey drums are so full of flavor and there are so many ways to use them.

My first recipe is my favorite.

It’s a smoked turkey charcuterie board, but I initially called it my Bam-Bam Board. Cute, right?

Smoked turkey drum and lots of accompaniments, this is a charcuterie board on steroids, but with the elegance of Martha Stewart. 

Besides being perfect for using up those leftover Thanksgiving turkey leftovers, it’s als great for dinner parties, football parties, baby showers, or any gathering.

This is your new go to for entertaining or just hanging out at home with your favorite people watching a movie.

Smoked Turkey Charcuterie Board

A key to a good charcuterie board, and any board really, is a good combination of different flavors and balance of texture and colors.

Here, I started with my centerpiece, the turkey drum, and built it out from there.

I thought about cheeses and spreads that would be good to taste with the smokiness of the turkey (or cheeses you’ve never tried, half the fun is tasting!)

I chose goat cheese and white cheddar, but you can use any variety of cheeses you like.

For the rest, choose pickled or brined veggies like olives and pickles as a contrast, and round it out with fresh fruits and vegetables such as tomatoes, fresh parsley and grapes.

There are so many options out there – blue cheese stuffed olives, spicy dill chips, pickled asparagus, etc. Have fun with it.

Lastly, choose your vehicles.

Crackers and crostini are perfect for everyone to make their own little appetizers. Stone ground mustard and honey are my flavor binders here.

A little turkey, tomatoes, basil and some cheese make a bite sized Caprese crostini.

Instructions

Thaw the turkey drum in the fridge overnight.

Build your board starting with placing the turkey drum in the center, then cheeses, and everything else around it.

Serve and enjoy!

Notes

This board will feed 2 really hungry people or 4 just snacking before dinner. This is an approximation based on what I made, and how much was gone, and how many people.
