Ingredient Notes

Beef & Pork – I like to use both beef and pork for these burgers because I get maximum flavor and juiciness without heavy greasiness. If you don’t have access those two, get 85/25 or 80/20 ground chuck.

Jalapeño Pimento Cheese – Homemade gives the best flavor, but store-bought can absolutely work on a busy weeknight.

Onion Rolls –  These are sturdy enough for a juicy stuffed burger, but still have a super soft interior.

Fried Onion Strings – These aren’t just garnish, they add crunch that balances the cheesy burger filling.

How To Make a Jalapeno Pimento Cheese Stuffed Burger

I like to grind my meats when I have the time, because freshly ground meat results in the best, most flavorful burgers. I also like the fact that I can control exactly what goes into my meat, the amount of fat, etc.                

I use my Kitchenaid mixer attachment to grind my meat, and I love it. It’s easy to use, easy to clean. I like to grill or smoke my burgers for the best flavor, but if I can’t for whatever reason I use this grill pan. Grill pans are great to have in kitchen arsenal.

They give you the grill marks that create that caramelized flavor; not to mention it makes your food look aesthetically pleasing. The ridges in the pan also allow the greases to sit below the level of the burger, which results in less grease and less fat.                               

As far as the vehicle (the bun) for the burger, I chose an onion roll. I love onion rolls, I think they add so much to your sandwich or burger as far as taste. I buttered both sides and browned them in the grill pan, which I think is usually necessary for burgers.

  • Seal the edges really well.
  • Chill the patties 15-20 minutes before grilling.
  • Don’t press them while cooking.
  • Use a thermometer instead of guessing.
  • Let them rest before serving.

Instructions

  1. Make the pimento cheese and fried onions; refrigerate the pimento cheese.
  2. Sprinkle the beef and pork lightly with salt and pepper.
  3. Using a meat grinder, grind the beef and pork.
  4. Combine ground sirloin, ground pork and marinade; form into 6-8 thin burgers.
  5. Place about a tablespoon of pimento cheese in the middle of half of them, and top with the other thin burgers, pressing to seal the edges.
  6. Grill or pan fry until done, being careful as you flip - You don't want to lose the cheese filling!
  7. Build the burger by placing lettuce on bottom bun, followed by burger, tomato and onion strings.
  8. Slather top buns with more pimento cheese and top.
