Smoked Corn Guacamole Flatbread

Although this might sound complicated, it’s a pretty straightforward recipe to put together. My Smoked Corn Guacamole Flatbread completely stands out from the typical.

This will become your new favorite appetizer, snack or game day food. It’s super soft naan, or flatbread, slathered with tomato sauce, cojita cheese, sharp white cheddar, cilantro, smoked corn and smoked corn guacamole. 

Y’all, this is so damn good.

Do I Have To Smoke the Corn?

If you can smoke the corn, I highly suggest doing this extra step. It’s actually the hallmark of this recipe; it’s what makes it fanfuckingphenom. It seriously does make a difference, because smoking imparts a flavor that is so unique, so unlike any other method of cooking.

It’s like the mother of cooking methods. No, not the father.

As you may or may not know, I have a severe love affair with my grill/smoker. So, until I can pull my toys out of storage, I’ve been playing with smokers that are safe for indoor kitchens.

You can always smoke indoors…

However, if you don’t have access to a smoker, your flatbread will still be delicious. As a matter of fact, you could add a drop or two of liquid smoke to get a touch of smokiness. Hey, it’s better than zero smokiness.

OR… You can do what I did and buy an indoor smoker.

There are a couple of options out there.

I bought this one, and it’ll do for right now, but it really doesn’t impart the smoke flavor I’m used to. Damnit, I miss my real smoker.

Indoor Smoker

Now, I’m thinking I want to try this one. It’s a little different because it has a thermometer and the smoking space is larger. And it’s so damn cute, isn’t it?

Smoked Corn Guacamole Flatbread

Smoked Corn Guacamole Flatbread

Yield: 1 Flatbread
Prep Time: 20 minutes
Cook Time: 12 minutes
Total Time: 32 minutes

Smoked white corn guacamole, two cheeses, tomato sauce and cilantro on soft Naan, or flatbread. Meet your new favorite fun food.

Ingredients

  • 2 Avocados, ripe
  • 1-2 Limes, juiced
  • 1/4 Sweet onion diced
  • 6-8 Grape Tomatoes, chopped
  • 1/2 Jalapeno, finely diced (more if you like heat)
  • 2 White corn cobs, smoked*
  • 1 tbsp Sea salt, or to taste
  • 2 handfuls Cilantro, fresh, chopped
  • Naan flatbread
  • 3/4 cup Tomato sauce
  • 1 cup Cojita cheese
  • 1 cup Cabot Pepperjack cheese, shredded

Instructions

  1. Smoke corn cobs, silks removed, @275 45-60 minutes.
  2. Preheat oven to 500 degrees.
  3. Make guacamole. Combine avocado through half of the corn. Salt, squeeze lime
    and taste, season and taste again if needed. 
  4. Spread tomato sauce over flatbread, top with cheese, chicken, handful of cilantro and remaining corn.
  5. Bake for 10-12 min, until cheese has melted.Remove from oven, top with remaining corn, cilantro and guacamole. 
  6. Serve with remaining guacamole and lime wedges.

Notes

*Smoking can be done in an outside smoker, or a smoker that is safe for indoor kitchens (see below).
