    Hello Shea,
I am looking at your WHITE CHEDDAR GREEN BEAN ORZO CASSEROLE WITH FRIED ONIONS STRINGS. Green bean casserole is part of my family’s (Macon, GA) Christmas tradition, and I am hoping to use your recipe. However, when I read the ingredients, I don’t see cheddar cheese listed. Maybe I am missing something. But if you see this before Christmas, please provide some details about the cheese.
    Thanks

Having worked at Krystal’s, there is NO butter. The onions are dried, minced onions, then rehydrated (I would say that this is to keep from having to mince a bunch of onions, and to keep from having them go bad!) Onto the heated grill top (in Krystal’s it is divided into 24 different sections, in a set amount of time, you add the Onions, then the burger patties (which ARE seasoned with salt and pepper! but, they are pre-seasoned at the factory). Then you put the top down let them cook for a set amount of time, then they are all flipped over and the bottom bun added, then topped by the top bun (again, all in a set amount of time) then steamed for another set amount of time, after which they are “held” for another set amount of time, if not used immediately) Then pulled off the grill, topped with Mustard and ketchup and cheese (if desired for all of them) and 2 pickles. No butter, ever because they are steamed, with the water coiming from the rehydrated onions!

There are some foods I like to fancy up, but a fried bologna sandwich should just be simple, easy and quick. What I remember was just…fry some bologna, spread the bread with mayo and mustard, slap on the bologna and enjoy. Lettuce makes it fancy, but I suppose I’d slap that on there too. I’ll make the first one basic and simple, and maybe I’ll graduate to fancy.

    September 2, 2019 at 3:40 PM

Hi, the au jus is the liquid in the slow cooker after you remove the meat, but if you don’t have enough in the slow cooker, add some beef broth and stir.

โ€œCombine chicken with soy sauce through pineapple juiceโ€??? Makes no sense. When and where is the Teriyaki marinade incorporated??? After the pineapple is carmelized and the chicken is grilled are the 2 mixed together??? Isnโ€™t using the reserved marinade, especially thatโ€™s been in contact with raw chicken, a health hazard???

  • Shea
    January 2, 2019 at 9:30 PM

Hi Jeffrey! If you look at the instructions, you combine the chicken through pineapple juice, the Teriyaki marinade included. The reserved marinade is combined with butter and pineapple, brought to a boil and simmered which kills any bacteria. Again, this step is in the instructions.

    Hope this helps.

As a young student who loves baking and cooking, this mixer would help me so much. I enjoy baking cookies for my friends and family, and a mixer would be so useful in making them. Plus I would be super motivated to learn new recipes, and learn doughs and breads! I love this recipe and can’t wait to try it! … Just one question: It says “1/2 white onions” … does that mean 1/2 cup white onions or 1/2 of a white onion … or is it just as many chopped onions as you feel like you need? Personally I would go with the latter, but I wanted to ask.

  • Shea

I made this dressing tonight and it is wonderful! You are right, it was so easy to make. I couldn’t find anchovy paste so I made my own from canned anchovies. I put all of the ingredients in my food processor and it was a snap! I’m making a large salad for an event and I doubled the recipe so I would have leftover dressing for the week. Thanks so much!

Shea, thank you for sharing your personal story with this recipe, I am divorced too, and although I still have two (grown) kids at home, they are quite reclusive and extremely picky eaters. I imagine what it will be like when they are gone. I know that my cooking creativity bothered my ex at times … also, I didn’t understand or believe he had special dietary needs and that’s my bad. Looking back, I wish I had paid more attention and made an attempt to cook to help his health, but I didn’t and I can’t go back and change it. I cook for myself a lot now and I love the freedom of it because I’m not constrained by anyone else’s food constraints or pickiness. Also: I think of it as not just cooking for myself, but also cooking for everyone else that might be cooking for one or two and wanting something good to eat (because I blog it!) … oh and I wanted to tell you too: I very rarely eat fried foods, but your pineapple sounds fabulous!

You and I will have to part ways when it comes to P.F. Chang’s. Chang’s is to Asian food what Olive Garden is to Italian. Perhaps you’d be willing to come visit us in Houston and allow me to take you to Chinatown. โ€” Now that I’ve trashed a couple of national chains, I think it’s fair to say that if (Chang’s) cooking had as much breadth and depth as yours, I’d feel differently. If I didn’t love you so much, I’d give you the middle finger for putting pumpkin in mac & cheese. “Depth” or no “depth,” this really does look delicious. If you really want to hop on the bandwagon and make a cupcake out this โ€” then cook it on a waffle iron. Oh, and make it gluten free. ๐Ÿ˜‰

The mayo trick is a good one. Been using it for years. (Not only does it produce a beautiful gold/brown, it’s a lot easier to spread than butter.) โ€” The sandwich looks beautiful, but I hate your guts for using the word ‘sammy.’

I really like how you are real with your cooking, Shea. Many foodie websites out there tend to only feature recipes that require a $700 machine to cook (sous vide) or include ingredients that you can only find in a small section of a single city on the opposite coast. ~ This recipe and your photos of it show that we can eat quite well without breaking the bank. Furthermore, most people eat like this. Thank you for this wonderful shit.

Hold your horses, Shea! Mustard and bologna are the shit. Apple pie and cheddar are the bomb. Burritos and rice are where it’s at. And everyone knows that grapefruit juice goes better with toothpaste than orange juice!

Coffee and meat are also a great marriage. I’ve even used coffee in my cowboy beans. (After all, that’s what they did back in the day.) The sandwich is restaurant-worthy.. NICE restaurant worthy (not some greasy spoon). I have mixed feelings on your egg preparation though. I’m a shitty egg cooker, because I lose my cool and break the yolk. (This is why my scrambled eggs are the best in the Western Hemisphere.) Needless to say, this steam thing could earn me some points. But… My bride and her mom (and my dad) can cook the perfect fried egg over the highest of heat. And that includes the over easy version that gets a quick flip before ending up on the plate.

So is your husband wrong? I wouldn’t say so. I’d just say that you and I need to learn how to fry an egg without steaming the damn thing.

I can honestly say that I’ve never had poutine, and I think our northern friends like that bullshit because they don’t know any better. (Sort of like me liking Pittsburg Hot Links.) OK. I should ease up on the throttle and give it a shot before I get all judgmental. After all, I like Rush and they’re from Canada. โ€” But I like ZZ Top and Black Joe Lewis & the Honey Bears even more, and they’re from my next of the woods. Your Steak and Cheese Fries are ZZ Top. Whereas poutine (which sounds like a vulgar word) is hardly Bryan Adams or Leonard Cohen. (Look them up.)

Don’t be a fraidy cat. Just pop that morsel in your mouth and go to town. ~ Those are the ‘Nagami’ Kumquats, although a couple of them look like the ‘Meiwa’ variety. How do I know this? Because I grow those plants on my front porch! Divine eating. And an outstanding jam! (Because I also grow hot peppers!) Good job, Shea. As always. ๐Ÿ™‚

North or South no matter. The only thing that matters is that you didn’t use a bunch of fillers, bell peppers the worst of the offenders. Thank you!

Your recipe sounds fantastic, I just wish crab meat wasn’t so ridiculously expensive. Harumph.

The Cabot Cooperative is some of the best cheese available nationwide. We are huge fans. You can keep your jalapenos though. I prefer the flavor of serranos and the heat of pequins.

Wow, Shea! That’s just really sexy. (And so is the burger!) It’s fun reading what so many fans have to say about Ally’s cookbook. Some folks have gone straight for the sweets, while others (like myself) have headed directly to the Asian section for the Korean ribs (aka “beef candy”). The one common denominator โ€” in everything I’ve seen โ€” is that everyone loves the author as much as they love her beautiful and exotic recipes. Wonderful job, Shea!

Confession โ€” I might be the only Southern boy who doesn’t like black eyed peas. But before you go into bitch mode, just know that this concoction of yours might just be the ticket to give them another chance. Looks wonderful!
P.S. – If you get a taco truck, please name it “Shut Your Taco Hole!”

  • Shea
    April 25, 2015 at 7:19 PM

What true Southerner doesn’t appreciate black eyed peas??? And, no, I will not name my truck anything that involves the word “hole”.

  • Adam J. Holland
    April 25, 2015 at 10:44 PM

Here’s the thing… My ma-maw once commented to me that I wasn’t a ‘Holland’ because I didn’t care for tomatoes from the vine. Interestingly, she said that while I was helping her shell peas beneath a pecan tree in her backyard. โ€”ย I’m a southerner. โ€”ย I can grow and fry okra better than anyone. And I can grow a tomato from any seed you throw my way. On top of all that, I can dip Copenhagen without getting dizzy!

  • Shea
    April 25, 2015 at 10:49 PM

I had a girlfriend in high school who really liked Taco Bell for the same reason you did. I broke up with her because, well… For one, I had another girlfriend at the same time and it was truly difficult maintaining two fake relationships. But the main reason was because she used improper grammar, yet scolded me for my recreational cussing. โ€” Your taquitos look bueno. Much better than the stuff at the drive-thru. And truth is, the ones you make at home are still only about 59 cents each.

You’re damn right that everyone loves cheese dip! And this one is the bomb! Did I ever tell you about the restaurant in my town that has sort of become locally famous because of its white cheese dip? Well, I boycotted those bastards several years ago for being rude to me when I called about a messed up order. My wife has cheated on me several times by eating there at lunch. She’s addicted. Truth is, this recipe of yours might just save her from herself.

That looks just like momos. Loved the dipping sauce idea. That would surely go too well with the dumplings. I think same dip can be used even with chicken/veg momos.

I made grits one time, either that or polenta. What’s the difference? I’m a yankee what the hell do I know? It came out good, but this motivated me to try again! Maybe I’ll use that bomb steak rub of mine. We do have some great seafood up here that could play a role. Cabot chedder is serious, love my VT neighbor. Great recipe/photos!

I understand – I’m married to a yankee! Grits and polenta are both made from stone ground cornmeal, but apparently from two different types of corn. There’s really not a major difference besides that, though. I love them both. Thanks for visiting!!

Hell to the effing yeah! Sounds like we’re in the same boat. My wife is a Yank (bred and born in the Bronx). The only thing she knows about grits, she saw in “My Cousin Vinny.” โ€”ย Grits were never a big thing in my home growing up in northeast Texas, but I do enjoy them so. Made ‘fresh’ grits just this past week to go with a blackened fish recipe. (Wife enjoyed it!) Beautiful, as always, Shea. ๐Ÿ™‚

Kyle, thank you so much for pointing that out!! How could I leave that ingredient out of the recipe – it’s there now. I should be ashamed.

Nice read & looks like an awesome recipe. Snack seasonings really do contribute to yummy dishes like this one. Poor ingredients equal a poor recipe and product. Thanks for the recipe though!! Looks awesome!

I babysat once. My sister paid me to take a gig of hers. I might’ve been 14 or 15 and the boy was 7 or 8. Everything was great – his mom bought us pizza and soda (and they had HBO). But then the boy comes waltzing into the living room after digging through his mom’s dresser. In one hand, he had a thong (presumably his mom’s); in the other hand he wanted to show me one of her … toys. That was enough for me to retire from the business of babysitting.

By the way, that dip (the real reason I am commenting) looks like great.
