I’ve used this for a couple years now and every time I make it the crowd goes wild. My father in law actually got mad at me one time for “wasting” the leftover remoulade (after all crab cakes were consumed)! He wanted to take it home!

What I remember was just…fry some bologna, spread the bread with mayo and mustard, slap on the bologna and enjoy. Lettuce makes it fancy, but I suppose I’d slap that on there too. After the pineapple is carmelized and the chicken is grilled are the 2 mixed together??? Isn’t using the reserved marinade, especially that’s been in contact with raw chicken, a health hazard???

January 2, 2019 at 9:30 PMHi Jeffrey! If you look at the instructions, you combine the chicken through pineapple juice, the Teriyaki marinade included. The reserved marinade is combined with butter and pineapple, brought to a boil and simmered which kills any bacteria. Again, this step is in the instructions.

I put all of the ingredients in my food processor and it was a snap! I’m making a large salad for an event and I doubled the recipe so I would have leftover dressing for the week. Thanks so much!

March 30, 2017 at 6:58 PMShea, thank you for sharing your personal story with this recipe, I am divorced too, and although I still have two (grown) kids at home, they are quite reclusive and extremely picky eaters. I imagine what it will be like when they are gone. I know that my cooking creativity bothered my ex at times … also, I didn’t understand or believe he had special dietary needs and that’s my bad. Looking back, I wish I had paid more attention and made an attempt to cook to help his health, but I didn’t and I can’t go back and change it. I cook for myself a lot now and I love the freedom of it because I’m not constrained by anyone else’s food constraints or pickiness. Also: I think of it as not just cooking for myself, but also cooking for everyone else that might be cooking for one or two and wanting something good to eat (because I blog it!) … oh and I wanted to tell you too: I very rarely eat fried foods, but your pineapple sounds fabulous!

Many foodie websites out there tend to only feature recipes that require a $700 machine to cook (sous vide) or include ingredients that you can only find in a small section of a single city on the opposite coast. ~ This recipe and your photos of it show that we can eat quite well without breaking the bank. Coffee and meat are also a great marriage. I’ve even used coffee in my cowboy beans. (After all, that’s what they did back in the day.) The burger looks fantastic, but I still can’t figure out how the people in your home state of Alabama will eat it … considering most of them lose their teeth by age 16.

October 22, 2015 at 7:09 PMThe sandwich is restaurant-worthy.. NICE restaurant worthy (not some greasy spoon). I have mixed feelings on your egg preparation though. I’m a shitty egg cooker, because I lose my cool and break the yolk. (This is why my scrambled eggs are the best in the Western Hemisphere.) Needless to say, this steam thing could earn me some points. But… My bride and her mom (and my dad) can cook the perfect fried egg over the highest of heat. And that includes the over easy version that gets a quick flip before ending up on the plate.
So is your husband wrong? I wouldn’t say so. I’d just say that you and I need to learn how to fry an egg without steaming the damn thing.

I went two days ago and was so excited about the Maytag Blue and Ellio’s pizza, that I ended up leaving the Maytag at the checkout. When I arrived back at the Jimmy Rockford, I had a 12 pack of peach soda, a big-ass bag of Hatch peppers and a six-pack of Sierra Nevada’s latest beer. Go figure.

After all, I like Rush and they’re from Canada. — But I like ZZ Top and Black Joe Lewis & the Honey Bears even more, and they’re from my next of the woods. Your Steak and Cheese Fries are ZZ Top. Whereas poutine (which sounds like a vulgar word) is hardly Bryan Adams or Leonard Cohen. (Look them up.)

(I realize you made yours with refrigerated leftovers, but hey… whatever works!) Thanks for this fabulous recipe!
