Juicy pork burgers topped with pineapple serrano salsa and creamy whipped feta—an easy, flavor-packed burger recipe that’s anything but ordinary.
Not to be dramatic, but these pork burgers have been quietly carrying my reputation for a decade.
This recipe came from a moment that felt a little ridiculous at the time – but in the best way. I was working with Snake River Farms and they sent me a massive prime rib of pork. Before seasoning it, I frenched the bones and ended up with about a pound of ridiculously beautiful, lean pork.
So naturally, I did what any reasonable person would do: I turned it into burgers.
And listen… these aren’t your average “let’s try pork instead of beef” situation. These are juicy, flavorful, borderline unfair burgers topped with a sweet-heat pineapple serrano salsa and creamy whipped feta that melts into every bite.
They were so good, they outlived the original roast.
The pork rib recipe? Very good.
These burgers? Outstanding.
Snake River Farms
Before the burger, there was this gorgeous Prime Rib of Pork from Snake River Farms. If you’ve never experienced their superior Wagyu beef and Kurobuta pork – you haven’t had the best.
This pork burger is off the charts, y’all.
Ground Pork Recipe
So, when I “Frenched” the rack of prime rib, I ended up getting so much good meat that I had a pound of freshly ground lean pork after I sorted it and put it through my meat grinder.

If you look at the meat underneath the bones, you’ll see what I’m talking about.
That made me pretty excited, so I wrapped it up and put it in my freezer so I could contemplate what to do with it.

Pork Burger Recipe
Sometimes it’s random things that give me inspiration. This time it was a pineapple – once I saw it I knew what I had to do.
Make a burger.
Pineapple Serrano Salsa
I made a salsa with the pineapple and serrano peppers because I wanted a little “kick” – not an “ass-kicking”, but a little bit of heat to compliment the pork, and this works so well. You’ll see when you make it what I’m talking about.
Whipped Feta
To both compliment and marry all flavor components of this burger, I whipped some feta cheese with cream cheese to make whipped feta. Oh my damn that stuff is amazing, and it was exactly what this burger needed.
I just love it when my food behaves and turns out just like I imagined it would.

I’ve never tasted ground pork this good. Of course, you could use store bought ground pork, but this freshly ground pork was off the charts amazing. I used my KitchenAid mixer’s grinder attachment to make it easily. You can buy it by clicking here, or below after the recipe.
The only thing I seasoned the pork with was a little soy sauce and ginger.
In a really good way.

Pork Burger with Pineapple Serrano Salsa and Whipped Feta
A juicy burger made with lean pork and topped with pineapple serrano salsa and
whipped feta cheese.
Ingredients
For the Salsa:
- 1 cup fresh pineapple, diced
- 1 16 oz. can petite diced tomatoes (I chop my smaller even though they're petite)
- ½ yellow onion, finely diced
- 2 serrano peppers, deseeded and finely diced
- 1 handful fresh Cilantro, chopped
- ½ lime, squeezed
- Dash of olive oil
- Dash of white vinegar
- Salt to taste
For the Whipped Feta:
- 4 oz. good feta cheese, crumbled
- 2 oz. cream cheese, softened
For the Burgers:
- 1 lb. ground pork
- 2 tbsp. soy sauce
- 1 tsp ground ginger
- 1 tsp kosher salt
- 1 tsp ground black pepper
- 4 burger buns, split
Instructions
For the Salsa:
- Combine all ingredients, taste and adjust.
- Cover and refrigerate until ready to use.
For the Whipped Feta:
- Whip both cheeses in a food processor until smooth.
- Cover and refrigerate until ready to use.
For the Burgers:
- Combine the pork and soy sauce; form into four burgers.
- *Pan fry or grill over medium heat until done, about 5-7 minutes each side, or until 160° in the center of the burger.
- Assemble by spreading whipped feta on bottom half of burger bun, top with pork burger, then salsa and top bun half.
- Serve!
