Knowing that this week’s ingredient is avocado, my mind initially went to something Mexican-y, like guacamole.
But how fun would that be? I love guacamole, but don’t see whipping that up as being very challenging. Plus I like to get creative. That’s my thing. (But only in the kitchen – I can’t draw or sew or sing to save my life).
So, it only took me a second to decide to make these burgers when the thought crossed my mind.
I know, I know – I recently did a burger post….but it IS summertime and I’m on the grill several times a week!
However, this burger is different. It’s beef, not turkey, and it’s topped with the ICM challenge ingredient, which is avocado!
AND I grilled it 🙂
Speaking of summer, I can’t believe the kids are going back to school this week – their summer break has flown by. They are excited; but I want it to be summer all year long…
Grilled Avocado and Sauteed Mushroom Swiss Burger
1 lb. ground beef
1 avocado
1 lb. mushrooms, washed and sliced
3 tbsp unsalted butter
1/3 cup red wine (not the grocery store cooking wine!!)
1 tbsp flour
1/4 cup cold water
Swiss cheese, sliced
2 tbsp Worcestershire sauce
1 tbsp seasoned salt
1 tsp coarsely ground pepper
1 tsp garlic powder
1 package hamburger rolls
Combine the beef, Worcestershire sauce, salt, pepper and garlic powder. Form into patties and refrigerate. In a saute pan over medium heat, melt the butter. Add the mushrooms and saute for about 2-3 minutes, stirring. Add the red wine, bring to a slight boil and reduce heat to medium-low. Simmer, stirring frequently, about 15-20 minutes. Combine the flour and water; add to the mushrooms. Stir until thickened, about 3-4 minutes. Remove from heat and cover.
Prepare your grill.
Cut the avocado lengthwise down the middle, peel the halves and remove the pit.
Once the grill is ready, add the burgers. When they have just a couple of minutes left, add the avocado halves cut side down on the grill, they only take about 1 or 2 minutes so watch them carefully. Cut them into fairly thin slices.
To assemble, spoon some of the mushrooms on top of the burger, the swiss cheese, then avocado.
And, yes the cheese melted. I was trying to hurry and get my pictures so I could eat it. Oh, and using a knife, I spread the avocado on my bread. Soooooo goooood…….

Oh, I could so chomp into that gorgeous burger! I’ve never grilled an avocado before and now it will haunt me till I do. 🙂

Okay, how hard was it to flip the avocado? Did you buy an extra firm one, or put more Pam on the grill? I love the whole concept of the burger, but sometimes avocado can be soft and I don’t want to see mine fall into the grates.

You don’t have to flip it! It only takes a minute or so, and it will have grill marks on the cut side, but warm and soft all the way through. The one I used was pretty ripe, but not TOO ripe.
