If you’re a broccoli fan, this will become your new favorite thing ever in the world. This is Cabot’s Cheesy Broccoli Casserole, and it’s the epitome of comfort food. I happen to really adore broccoli, so when I was first perusing their book I fell in love with the ingredients alone.
Think of it as broccoli cheese soup married ritz chicken. But without the chicken.
Y’all get my point.
This recipe is from Cabot Creamery’s first ever printed cookbook – OMG it’s amazing.
I sat in the bed yesterday watching Talladega Nights and put away half of this pan. Sssshhhhh – I did have some help! I mean, a little.
Our “tasting” of it turned into a little more than a tasting. Not even ashamed.
This stuff is like crack. So cheesy, so tasty, and y’all – no main dish is even needed. Take this to a BBQ or a holiday party and people will be fighting over it – I can assure you.
Just look at all that cheesy goodness…
You’re gonna need this book in your life! If you have never tried Cabot Cheese, you definitely need to take my word for it and buy a bar or two and you’ll see exactly what I’m saying.
I mean, seriously, just the #dailymoos on Facebook alone are enough to get you hooked on them.
The book is divided by categories and has everything from breakfast recipes to desserts. It’s a book full of recipes for real people, and you’ll find yourself reaching for it over and over again again. I got it when it first came out, and it’s still one of my favorite cookbooks; and trust me – I have a LOT of cookbooks.

Ingredients
- 1 large egg
- 1 can cream of mushroom soup
- 1/2 cup mayo
- 1 small onion, chopped
- 1 16 oz bag frozen broccoli, steamed until tender
- 6 oz. sharp or extra sharp cheddar
- 1 sleeve round butter crackers, such as Ritz
- 4 tbsp. butter, melted
Instructions
- Preheat oven to 350 degrees
- Coat a 9x13 inch baking dish with cooking spray.
- Lightly beat egg with fork in a large bowl.
- Whisk in soup, mayo and onion.
- Stir in broccoli and cheddar.
- Spread mixture evenly in dish.
- Mix crackers with butter in a small bowl, and sprinkle evenly with over broccoli mixture.
- Bake 45 minutes to 1 hour until golden and bubbly.
