There’s something so beautiful about a well made BLT. The bacon has to be crispy, the lettuce fresh, and the tomato ripe (but not too ripe!). I was craving one a while back and things just kinda got out of hand.
My 16-year-old daughter was the hand model in this shot. She HATES meat of any kind – refuses to touch it, let alone eat it. She was so sweet to help me out.
Then she started to gag a little bit because one of her fingers almost touched bacon. ← Yes, that happened.
I just don’t get it. Why do teenagers have to be so damn dramatic?? She’s in denial about the fact that at age 2 1/2 she would eat a McDonald’s cheeseburger and enjoy it.
Anyway, back to the sandwich.
This went from being your basic BLT to the addition of buffalo chicken, buffalo mayo and more buffalo sauce thrown in the mix.
I have a very special place in my heart for buffalo chicken, and the combination of it with the BLT is magical and just downright amazing. I also chose to go with Texas toast – this needed something a bit more sturdy than plain ass white bread.
It did not let me down.
Ingredients
- 3 tbsp mayo
- 1 tbsp buffalo sauce - I love Moore's Buffalo Wing Sauce
- French bread slices, toasted
- 2 tbsp butter, melted
- Coarsely ground pepper
- Buffalo chicken (I used Tyson frozen buffalo chicken strips and roughly chopped them)
- Bacon
- Tomato Slices
- Lettuce
- More buffalo sauce for drizzling (optional)
Instructions
- Combine mayo and buffalo sauce in a bowl.
- Brush butter on both slices and sprinkle with pepper.
- Assemble the BLT by spreading buffalo mayo on bottom bread slice.
- Stack the chicken, bacon, tomato, and lettuce.
- Drizzle with more buffalo sauce.

September 15, 2015 at 7:17 PMThe teen drama is related to the dark nail polish. They eventually outgrow it! Going to get some bread for Texas Toast; got everything else right now!
