My husband and I have been married 6 years!
For our 6th anniversary, my husband decided to cook for me. This, coming from a man who says he “doesn’t know how to cook”.
Yeah right – The man makes the best eggs you’ve ever had.
On our very first date, back in the summer of 2004, he flew up from south Florida to see me. But for a few months before that, we talked on the phone, chatted online, etc. every single day since the day we met. See, we met online. And it was an accident. But… that’s a story for another day.
Months passed, and we became very good friends – talking every single day. He knew everything about me and I knew everything about him. We knew what each other looked like. We knew the other’s likes and dislikes. I knew at that point that my day was not complete if I didn’t talk to him. We were both going through our own personal hell but at the end of each day we said goodnight to each other – via the phone. Then one day during one of our long talks, he said… “I have to come to Birmingham to see you.”
He loves to tell the story of the day I picked him up from the airport. See, my mother called and called and called (and called some more)….she was concerned, not because I was going to the airport to pick up a stranger I had met on line. She was concerned because I was driving in city traffic. . Yes, that happened. Long story short, he came to Birmingham, we had what we like to call The Best Weekend Of Our Lives, and on Sunday evening before he left he said, “You aren’t seeing anyone else, right? Because I’m going to marry you.”
Anyway, on our first evening together (in person), he cooked me Chicken Parmesan. He said his grandfather loved it when he made it. As did I.
Oh, and by the way yes he did, in fact, marry me.
Continue with remaining chicken. Add the chicken to the hot oil, cooking 3-4 minutes at a time, until golden brown, then lay flat on the baking sheet.
Spoon the Barilla sauce over the top; cover with cheese.
Bake for 15 minutes, or until the cheese is melted and the chicken is done.
I’m going to have to come up with more reasons for the man to cook.

Here’s your printable –
Ingredients
- 2 lb thin-sliced boneless, skinless chicken breasts
- 1 12 oz package spaghetti
- 1 block whole milk mozzarella cheese, sliced thin
- 1 jar Barilla green and black olive sauce
- 3 eggs, whisked
- 2 cups Italian breadcrumbs
- 1/2 cup canola oil
- Cooking spray
Instructions
- Preheat oven to 425°. Coat a large baking sheet with nonstick spray. Wash chicken breasts, pat dry. Dip chicken in the egg, then breadcrumbs, set aside. Add the canola oil to a large saute pan over medium-high heat.
