I made this especially for my daughter, Katelyn, yesterday while trying to come up with new things to get her to try. She LOVES cheese and she has tried pimento cheese before, but she said the “red things” were gross. I think she told herself that.
So, this is my version minus the “red things”. I do have to admit – I didn’t miss the pimentos.
Un-Pimento Cheese
1/2 cup cream cheese, softened
1/4 cup mayonnaise (the REAL stuff, not fat free)
2 tbsp sour cream
2 cups sharp cheese, shredded (the regular shreds, not fine)
1/2 tsp cayenne pepper
1 tsp garlic powder
1 tsp seasoned salt
Using a hand held mixer on low, mix the cream cheese until smooth. Add the mayo and sour cream and mix until combined. Then add the rest of the ingredients and stir with a large spoon to incorporate everything together.
You can play with this recipe – you might find that you want more cayenne, less mayo, etc. The sharper the cheese, the better!
Spread this on bread for a sandwich (if you’re Southern you know it must be white), or scoop it up with pita chips or crackers.
Or, if you’re a cheeseaholic you could just eat it with a spoon~

This would be a great snack… I am glad it’s without the pimentos… I like it better this way! 🙂 And, yeah, I’m a cheesaholic… I could definitely eat that up all by myself.
