Ingredients
- 1 poblano pepper
- 1 tsp olive oil
- 1 tsp salt
- 15 oz can black beans, rinsed
- ¼ cup tahini
- 1 garlic clove, minced
- ¼ cup yellow corn
- ¼ cup olive oil
- Salt, to taste
Instructions
- Preheat oven to 450 degrees.
- Drizzle pepper with olive oil and sprinkle with salt. Roast for 2-3 minutes on both sides, until blistered.
- Immediately place the pepper in a zip lock bag, close and let it rest for about 10 minutes. Remove from the bag and pull the blistered skin off, discard.
- Put all ingredients in a food processor, pulse until smooth.
