    Having worked at Krystal’s, there is NO butter. The onions are dried, minced onions, then rehydrated (I would say that this is to keep from having to mince a bunch of onions, and to keep from having them go bad!) Onto the heated grill top (in Krystal’s it is divided into 24 different sections, in a set amount of time, you add the Onions, then the burger patties (which ARE seasoned with salt and pepper! but, they are pre-seasoned at the factory). Then you put the top down let them cook for a set amount of time, then they are all flipped over and the bottom bun added, then topped by the top bun (again, all in a set amount of time) then steamed for another set amount of time, after which they are “held” for another set amount of time, if not used immediately) Then pulled off the grill, topped with Mustard and ketchup and cheese (if desired for all of them) and 2 pickles. No butter, ever because they are steamed, with the water coiming from the rehydrated onions!

    I made a half recipe. Used just one anchovy. Will add 2-3 next time. It was much better on day 2 and 3. Very nice and I love that there is no raw egg.

    Excellent wings. Really good lemon pepper flavor. Would like them a little crispier. Maybe a few minutes at a higher temp or a couple minutes under the broiler.

    This isn’t the best crab cake recipe I’ve ever followed, it’s the best recipe I’ve ever followed!

    I’ve used this for a couple years now and every time I make it the crowd goes wild. My father in law actually got mad at me one time for β€œwasting” the leftover remoulade (after all crab cakes were consumed)! He wanted to take it home!

    There are some foods I like to fancy up, but a fried bologna sandwich should just be simple, easy and quick. What I remember was just…fry some bologna, spread the bread with mayo and mustard, slap on the bologna and enjoy. Lettuce makes it fancy, but I suppose I’d slap that on there too. I’ll make the first one basic and simple, and maybe I’ll graduate to fancy.

    β€œCombine chicken with soy sauce through pineapple juice”??? Makes no sense. When and where is the Teriyaki marinade incorporated??? After the pineapple is carmelized and the chicken is grilled are the 2 mixed together??? Isn’t using the reserved marinade, especially that’s been in contact with raw chicken, a health hazard???

    Hi Jeffrey! If you look at the instructions, you combine the chicken through pineapple juice, the Teriyaki marinade included. The reserved marinade is combined with butter and pineapple, brought to a boil and simmered which kills any bacteria. Again, this step is in the instructions.

    I love this recipe and can’t wait to try it! … Just one question: It says “1/2 white onions” … does that mean 1/2 cup white onions or 1/2 of a white onion … or is it just as many chopped onions as you feel like you need? Personally I would go with the latter, but I wanted to ask.

    I made this dressing tonight and it is wonderful! You are right, it was so easy to make. I couldn’t find anchovy paste so I made my own from canned anchovies. I put all of the ingredients in my food processor and it was a snap! I’m making a large salad for an event and I doubled the recipe so I would have leftover dressing for the week. Thanks so much!

    Those wings look yummy! I bookmarked them for our next smoking weekend. Have you tried smoked eggs? Omg! Every time my husband fires up the smoker we add a dozen eggs for about 2.5 hours. Smoked egg salad is so good.

    Shea, thank you for sharing your personal story with this recipe, I am divorced too, and although I still have two (grown) kids at home, they are quite reclusive and extremely picky eaters. I imagine what it will be like when they are gone. I know that my cooking creativity bothered my ex at times … also, I didn’t understand or believe he had special dietary needs and that’s my bad. Looking back, I wish I had paid more attention and made an attempt to cook to help his health, but I didn’t and I can’t go back and change it. I cook for myself a lot now and I love the freedom of it because I’m not constrained by anyone else’s food constraints or pickiness. Also: I think of it as not just cooking for myself, but also cooking for everyone else that might be cooking for one or two and wanting something good to eat (because I blog it!) … oh and I wanted to tell you too: I very rarely eat fried foods, but your pineapple sounds fabulous!

    Looks so pretty, and I agree you hardly need the meatballs but hey, why not. If you love olives, try hunting down some arbequina – they are little Spanish olives and have a lovely flavor, even if you don’t get as much to eat for your olive as many others.

    This burger looks amazing, A few years ago, I took a class that taught how to prepare meals using meat and poultry. During the unit with ground meat, our instructor told us that for the best flavor, we should always use two or more types of ground meat. He was right.     I really like how you are real with your cooking, Shea. Many foodie websites out there tend to only feature recipes that require a $700 machine to cook (sous vide) or include ingredients that you can only find in a small section of a single city on the opposite coast. ~ This recipe and your photos of it show that we can eat quite well without breaking the bank. Furthermore, most people eat like this. Thank you for this wonderful shit.

    Hold your horses, Shea! Mustard and bologna are the shit. Apple pie and cheddar are the bomb. Burritos and rice are where it’s at. And everyone knows that grapefruit juice goes better with toothpaste than orange juice!

    Coffee and meat are also a great marriage. I’ve even used coffee in my cowboy beans. (After all, that’s what they did back in the day.) The burger looks fantastic, but I still can’t figure out how the people in your home state of Alabama will eat it … considering most of them lose their teeth by age 16.

    The sandwich is restaurant-worthy.. NICE restaurant worthy (not some greasy spoon). I have mixed feelings on your egg preparation though. I’m a shitty egg cooker, because I lose my cool and break the yolk. (This is why my scrambled eggs are the best in the Western Hemisphere.) Needless to say, this steam thing could earn me some points. But… My bride and her mom (and my dad) can cook the perfect fried egg over the highest of heat. And that includes the over easy version that gets a quick flip before ending up on the plate.

    So is your husband wrong? I wouldn’t say so. I’d just say that you and I need to learn how to fry an egg without steaming the damn thing.

    I can’t say I’ve ever tried frying an egg like that but I do this BLT a lot! Sometimes when I have time, I even make pepper candied bacon. My manservant loves this sammy and only real mayonnaise for him! (No tomato though, please!)

    Shea, I’ve never been so glad to have a stash of pulled pork in the freezer. “Reconstituting” it with chicken stock and hot sauce will keep it moist (and add a kick!), and my hubby will have no idea that he’s eating leftovers.     OMG this makes me laugh. It’s called Devon in Australia and a couple of weeks ago we were at the deli and John ordered some rare roast beef sliced thinly and some ham and I said, “I’d like one slice of Devon please.”

    He looked at me as if I’d just stepped off Mars. “Why???” he said.

    “I’m going to have a fried baloney sandwich for lunch,” I said with a smile. The eyeroll I got could have won an Oscar. And yes, I sang the baloney song while I prepared my sandwich. I didn’t have any onion rings or fancy mayo either but I will next time. πŸ™‚

    Wow, Shea! That’s just really sexy. (And so is the burger!) It’s fun reading what so many fans have to say about Ally’s cookbook. Some folks have gone straight for the sweets, while others (like myself) have headed directly to the Asian section for the Korean ribs (aka “beef candy”). The one common denominator β€” in everything I’ve seen β€” is that everyone loves the author as much as they love her beautiful and exotic recipes. Wonderful job, Shea!

    I made grits one time, either that or polenta. What’s the difference? I’m a yankee what the hell do I know? It came out good, but this motivated me to try again! Maybe I’ll use that bomb steak rub of mine. We do have some great seafood up here that could play a role. Cabot chedder is serious, love my VT neighbor. Great recipe/photos!

    I understand – I’m married to a yankee! Grits and polenta are both made from stone ground cornmeal, but apparently from two different types of corn. There’s really not a major difference besides that, though. I love them both. Thanks for visiting!!

    Hell to the effing yeah! Sounds like we’re in the same boat. My wife is a Yank (bred and born in the Bronx). The only thing she knows about grits, she saw in “My Cousin Vinny.” β€”Β Grits were never a big thing in my home growing up in northeast Texas, but I do enjoy them so.     I haven’t tried to freeze them, but I’m sure they would be fine! Bake them first and store them in freezer bags.

    I, too, am obsessed w/mason jars! I use them for all kinds of things. Drinks, quick pickled veges, pickled creamy cucumbers, making and storing salads and salad dressings, marinades, I use them for all kinds of things! So, this would enable my obsession even more ;-).

    I’ve heard awesome things about keeping salads/lettuce in jars…I think I’d try that. Apparently it keeps the salad fresh for a long time.

    I babysat once. My sister paid me to take a gig of hers. I might’ve been 14 or 15 and the boy was 7 or 8. Everything was great – his mom bought us pizza and soda (and they had HBO). But then the boy comes waltzing into the living room after digging through his mom’s dresser. In one hand, he had a thong (presumably his mom’s); in the other hand he wanted to show me one of her … toys. That was enough for me to retire from the business of babysitting.

    By the way, that dip (the real reason I am commenting) looks like great.
