Turkey Salad Club Sandwich

The Turkey Salad Club Sandwich is a crazy delicious double decker with turkey salad, crispy bacon, tomato, rapini and a fried egg. Although it still contains leftover turkey from Thanksgiving, it’s a much needed change from holiday food!

You know you’ve got some leftovers from that crazy, stressful Thanksgiving, so let’s put them to good use, shall we?

Now, keep in mind that I don’t mean the typical boring leftover type of dishes. Anybody can make Turkey Tetrazzini (which I did make, yes) or regular turkey sandwiches. I mean, how exciting is a plain ass turkey sandwich??

What is a Turkey Salad Club Sandwich?

Today I made a turkey salad, just like I make my chicken salad, with the regular mix ins – or I guess my typical mix ins – boiled egg, pickled jalapeños, onion, seasoned salt, mayo, etc. Then, I made the decision to make an epic sandwich because that’s how I like to do things.

Most of the time.

I added a runny egg and bacon, of course. Other casts of characters here are fresh tomatoes and greens…but not just any greens.

Rapini greens.

I know, it’s so unconventional and maybe it sounds a little weird, but they’re SO good! Did you know that rapini greens can help to prevent the development of cancer causing cells ? Also, a US study showed that including larger portions of broccoli rabe every week helps reduce the incidence of breast and lung cancer.

I had no idea.

I guess you learn something new everyday.

I also made a cranberry horseradish mayo and piled it all up on some fresh potato bread. It’s a seriously delicious sandwich – not to mention a little messy, but that’s nothing a couple of napkins can’t fix. 

And omg that egg…

Turkey Salad Club

Turkey Salad Club Sandwich

Yield: 3 Sandwiches
Prep Time: 20 minutes
Cook Time: 7 minutes
Total Time: 27 minutes

Ingredients

Turkey Salad:

  • 2 cups leftover turkey, chopped
  • 1 1/2 cups mayo
  • 1 tsp Dijon mustard
  • 1/2 cup pickled jalapeños, diced (or pickles)
  • 1/2 cup yellow onion, diced
  • 1 boiled egg, diced
  • 1 tbsp seasoned salt
  • 1 tbsp coarse pepper

Cranberry Horseradish Mayo:

  • 1 cup mayo
  • 1 tbsp prepared horseradish
  • 1 tbsp canned cranberry sauce

For Each Sandwich:

  • 12 slices potato bread, toasted (or your favorite bread)
  • 1/2 lb. bacon, cooked crispy
  • 3 eggs, over medium
  • Handful Rapini leaves, washed
  • 1 large tomato, sliced
  • Salt and pepper to taste

Instructions

    Turkey Salad:
    Combine all of the ingredients and refrigerate.

    Cranberry Mayo:
    Combine all ingredients and refrigerate.

    Sandwich:
    Spread cranberry mayo on bottom bread slice, followed by rapini leaves, turkey salad, another bread slice, cranberry mayo, tomato and bacon.
