Ok, off topic real quick. I’m just curious – have y’all seen James Spader’s new show – The Blacklist ?

Yes, I’m watching tv while I’m writing – maybe it feeds my creativity. I have seriously had a crush on him since the ’80’s, like when I was pubescent and he had long blonde hair and pleated khakis. It doesn’t matter how old he is. He’s the shit. I absolutely LOVED Boston Legal. I mean, seriously, primetime doesn’t get much better than that. Whatever happened to real primetime, by the way? I think it died somewhere in between American Idol began and Desperate Housewives ended. The latter completely broke my heart.

I’m still grieving over the loss – no one will ever truly understand what those Sunday nights meant – me and chilled Chardonnay with my favorite girls on Wisteria Lane. WHY would they cancel my show??

Anyway…I don’t think I like The Blacklist.

I know I’ve rambled – now back to the taquitos. So sorry to interrupt them.

Salmon and Wasabi Coleslaw Taquitos

Ingredients

  • 1 lb fresh salmon fillets
  • 1 tbsp Old Bay seasoning
  • 1 tbsp seasoned salt
  • 2 tbsp olive oil
  • 3/4 cup mayo
  • 3 tbsp wasabi powder
  • 1/2 bag angel hair coleslaw
  • 1/2 tomato, diced
  • 1/2 yellow onion, diced
  • 1 cup feta cheese, crumbled
  • 1 stick salted butter, melted
  • 1 pkg flour tortillas, soft taco size
  • Dipping Sauce:
  • 1/4 cup soy sauce
  • 2 tbsp balsamic vinegar
  • 1 tsp sesame oil
  • 1/2 tsp ground ginger
  • 1 shot sriracha hot sauce
  • Scallions

Instructions

  • Combine Old Bay through olive oil and brush on salmon fillets. Grill or broil until done; about 5-7 minutes. Remove from heat and flake with a fork.
  • In a mixing bowl combine mayo and wasabi powder - add coleslaw through onion and mix thoroughly. Set aside.
  • To each tortilla add about 2 tbsp each of salmon and coleslaw, and sprinkle with feta cheese. Roll up and brush with melted butter.
  • Spray a large saute pan with cooking spray over medium heat and add taquitos. Brown on each side 2-3 minutes.
  • Combine dipping sauce ingredients and serve.

Here I combined seafood, coleslaw and wasabi all wrapped up in a flour tortilla to make one fantastic taquito.

This is fusion at its best. I haven’t tried canned salmon with these, but I have a feeling it would work. Let me know if you try it.

    Hey girl! Ok, I watched the Blacklist and James Spader is creepy good but I don’t know. I hardly ever watch TV but was drinking wine and watching.

    However – SALMON AND WASABI COLESLAW!! Unreal. You are a crazy cookie….. so creative and wild with your ideas. I was going to use the B word but decided against it.
