Pizza Ravioli Bites and A Chance To Win A Gift Card!

These BeBetsy girls….what am I going to do with them?

Ok, fine, I’ll take that back. I’m a one dog person, and that one dog is Sally.

See, Sally is our family dog, and her ass stays in the backyard because –

1.    My son has asthma.

2.    Dog hair is straight up nasty.

Now, if you’re really an animal lover, you’ll appreciate this story. And I have to share it because it involves both Sals and my sweet man. Sally got sick this past year with a systemic yeast infection and she had to be hospitalized for a couple of days for IV fluids.

I thought Mark was going to have a complete breakdown. I’m not making fun; he loves that dog as if he gave birth to her.

See on her paw where the IV was? She got better with meds and lots of love (obviously). I just wished she would stop shedding all that fluffy ass hair that blows in when the back door is open.

Did I mention that my husband built her a custom made dog house with siding, ventilation, heating and air AND insulation? Oh, I didn’t? Yes, this happened.

Welcome to my world.

So, anyway-

Now, this contest is for DECEMBER ONLY.  Post your pet pictures on BeBetsy and you’ll be entered in a random drawing for a $25.00 gift card.   If you have more than one pet enter them all – greater chance of winning.  Yay!

Onto the recipe –

Pizza Ravioli Bites

First make my standard pizza dough recipe which is:

4 1/4 cups all purpose flour

1 tsp sea salt

2 cups warm water

1 tsp active yeast

1/3 cup olive oil

Combine the flour and salt in your stand mixer bowl. Sprinkle yeast over water and let sit for 10 minutes.

With mixer on low, slowly add the water, followed by olive oil. Mix long enough for dough to form; remove and put in a large bowl coated with olive oil. Cover until ready to use.

You will also need:

Pizza sauce

Muenster cheese

Pepperoni, chopped

Dried basil

I made these using my ravioli press, which looks like this…

Preheat oven to 500°.

On a floured workspace, roll out the dough to about 1/3″ thick (doesn’t have to be perfect), cut two sheets a size a little bigger than the ravioli press and drape over the bottom part of press. Gently press in with the tips of your fingers to make indentions.

Fill each indention with sauce, pepperoni, and cheese. Drape the other sheet over the top and press down hard with the top part of the ravioli maker (the metal thingy).

Repeat with remaining dough. You could also make these without a press just as easily – after rolling out the dough, cut it into equal size sheets. Evenly space out the pizza filling on the dough, cover with another sheet and press down around where the fillings are; cut into squares.

Drizzle with olive oil and bake for about 8-12 minutes.

Top with dried basil and serve with more pizza sauce for dipping.
