Pineapple Guacamole

It’s almost Cinco de Mayo – and just for you I made a new guacamole.

I love all kinds of guacamole.

I especially love going to the Mexican restaurants and have them make it at your table (tableside guacamole <— apparently it’s a thing.)

‘Cause then you know there’s no nasty hair in it or somebody’s body fluids.

Ew, gross! Ok, sorry.

This guacamole is over the top. I made it like I normally do, but I added crushed pineapple and a little pineapple juice.

I really pondered the decision about adding diced tomatoes, but after tasting with and without, it definitely benefits from it.

It just balances it all out.

I, personally, would have added more jalapeños. I know, I always say that. But it’s the truth.

I’m surrounded by people that don’t like heat. Ok, well, Katelyn does.

I can imagine putting this on a burger topped with some queso dip and caramelized jalapeños.

Oh, dear – now I have to do that.

Here’s your printable for the guacamole-

Pineapple Guacamole

Ingredients

  • 2 ripe avocados
  • 1 8 oz can crushed pineapple, and 1 tbsp of the juice
  • 1/2 onion, diced
  • 2 jalapenos, diced
  • 1 tsp garlic powder
  • 1 tbsp lime juice
  • 1/2 14.5 oz can petite diced tomatoes, drained and rinsed (add more depending on your taste)
  • 2 tbsp salt (more or less to taste)

Instructions

  • Combine all ingredients with a fork or anything that smushes it all together.
  • Yes, smushes is a word.
  • Serve with chips, on tacos or whatever!

    The Pineapple Guacamole is pure genius. While the Beef Enchilada Lasagna does seem to have aphrodisiac qualities to it … Oh hell, never mind! I gave up being a perv for one week and it’s killing me! (The Beef Enchilada Lasagna looks mighty fine.)
