Food Network has teamed up with food bloggers to bring back Summer Fest 2011, a summer long event featuring our recipes made with fresh, in-season fruits and vegetables. This is my first time taking part in it, and I’m pretty excited. This week is peaches!
In the summertime there’s really nothing like fresh fruit, especially from local stands or farmer’s markets. Everything taste better there, especially peaches. I like to buy locally grown (Chilton County, AL). Ever heard of a Chilton County peach?
This is my go-to recipe for cobbler; it’s pretty much fool proof. I’m definitely not a baker, so if I can make this anyone can.
Preheat oven to 350°.
In a large mixing bowl, combine the flour, baking powder and salt, then stir in egg and milk. Evenly drizzle the melted butter into a 9X13 baking dish, then add the flour mixture.
Combine the sugar, cinnamon and peaches. Spoon this mixture over the batter – but do not stir it.
Bake 30-45 minutes, but check after about 25 minutes because in my oven, sometimes it tends to get more done around the edges quicker than the middle. If that happens, cover the outside with strips of aluminum foil and bake until the inside is done.
Top it off with vanilla ice cream, and dig in.
My husband swears up and down he does NOT like “warm fruit” in his food. He ate this. And then ate it some more. I didn’t remind him that there’s “warm fruit” in there.
I might have taken a bite or two.

Oh man! I haven’t had peach cobbler in a long time. I had it all the time when I lived in Texas. You just don’t see it much here in Wisconsin.
