Miniature Pizza Pies

These are little baby versions of pizzas.

Recently, I was asked to recreate two of Ragu’s recipes.

The first one I did was Italian Sausage and Peppers, and my spin on it was Open Faced Italian Sausage with Caramelized Onions and Peppers.

The second recipe I recreated was their Upside Down Deep Dish Pizza. I made little baby pizzas using my mini muffin pan.

So cute and so much fun to make. You can make these your own. Add any meats, veggies, etc.

I used fresh mozzarella cheese, Ragu Old World Style Traditional Sauce and my homemade pizza crust.

Then topped them with black olives and fresh chopped parsley.

You could even put a layer of pizza dough on top before baking and make mini pizza pot pies.

*gasp* How.Cute.

These would be so much fun for a dinner party appetizer!

Or a luncheon.

Or a baby shower.

Or a day off work when you just want to lock the doors and stuff your face with pizza. What can I say. These are scrumptious little pizza bites.

Miniature Pizza Pies

Ingredients

  • 1 1/2 cups warm water
  • 1 packet yeast
  • 4 cups all purpose flour
  • 1 tsp salt
  • 1/3 cup olive oil
  • I jar Ragu Old World Style Traditional Pasta Sauce
  • 2 cups Mozzarella cheese
  • 1 bunch fresh flat leaf Italian parsley, chopped
  • 1/2 cup black olives, pitted

Instructions

  • Combine the water and yeast in the bowl of a stand mixer; let sit for 10 minutes.
  • Stir on low and add flour, salt and olive oil.
  • Mix on medium until the dough pulls away from the bowl; adding more flour if needed.
  • Roll into a ball, drizzle a little olive oil to the bowl and roll the dough around to get it greasy.
  • Cover with plastic wrap and refrigerate for at least an hour.
  • Preheat oven to 400 degrees and spray a mini muffin pan with baking spray.
  • Spread about a tablespoon full of dough (you may need to use a little less) in each place of your muffin pan. You want it pretty thin, but going up the sides.
  • Add about a tablespoon of sauce, then a generous sprinkle of cheese.
  • Bake for 15 minutes, or until cheese is melted and the crust is beginning to brown.
  • Top with olives and parsley.
