Katie’s Macaroni and Cheese

My little girl has been bitten by the culinary bug.  She doesn’t really know it, but I think she has.

She is very picky, and has a rather small list of things she enjoys eating.  A few on her list include:

♥   Macaroni and cheese

♥   Cheese pizza

♥   Cheese nachos

♥   Grilled cheese

See a trend here?  And meat grosses her out; won’t even attempt to try a cheeseburger.  I have promised her the day she decides to eat one she’ll wonder what in the world took her so long.

But for now, mac ‘n cheese ranks very high on her list.  Here lately, she has been pulling different types of pasta out of the pantry, different types of cheeses, etc. and working on tweaking her macaroni recipe.  This one by far is the best.  I could not have done a better job – she nailed the combination.

Katie’s Macaroni and Cheese

12 oz pasta (use a hearty kind; she used ziti)

6 slices American cheese, (she used Velveeta thick slices), torn into pieces

1 cup mild cheddar, shredded

1/4 block jalapeno jack cheese, shredded

1 stick (1/2 cup) real butter

1/4 cup milk

Cook the pasta according to package directions.  Drain, turn the heat to low and place the pot back on the stove.  Add the cheeses and butter and stir constantly for about 1-2 minutes.  Add the milk and stir until all the cheese has melted.  Salt and pepper to taste.

Maybe next time I can get her to make her cheese sauce and we can put it over broccoli 😉
