Insalata Caprese and The ICM Ingredient

Just a simple little recipe today before I announce the Ingredient for our Challenge Monday this week.  I know we have been away for a few weeks, but we’re back and there are a few exciting things happening behind the scenes with ICM (there will be announcements soon!).

This is the one of the easiest things to make, and one of my favorite ways to use basil.

Insalata Caprese

1 lb fresh mozzarella, sliced about 1/4″ thick

3 ripe tomatoes, sliced

1/2 cup fresh basil leaves

Balsamic vinegar, for drizzling

Coarse salt

Pepper

Layer the mozzarella, tomatoes and basil leaves.  Drizzle the vinegar, then plenty of salt and pepper.

If you don’t like balsamic vinegar, you could just use some extra virgin olive oil.

Onto Ingredient Challenge Monday.

This week’s ingredient is….

lemon
Lemons

I.LOVE.LEMON.

Can’t wait to see what Sunny at And Love It Too! comes up with!  Check back with us tomorrow to see both of our recipes.

Cheers-
