You dip them in fluffy marshmallow dip. 

I want to call them choffles.

Hot Chocolate Waffles with Marshmallow Dip

I’ve been itching to use my waffle iron lately. Initially I made savory waffles (recipe coming soon), but the idea to make these hit me in the face when I opened the pantry and spotted a ridiculous amount of hot chocolate that my husband bought during Snowpocalypse 2014, which was last week.

???? When I was stuck at work for three solid days ????.

We were supposed to get a DUSTING.

A.DAMN.DUSTING.

This is what was forecasted on my way to work:

“Up to one inch of snow with no accumulation or travel problems anticipated.”

Really? Does this look like a dusting?

With no travel problems??

I cannot tell you how absolutely miserable those three days were. Please, February, bring us early Spring like you did two years ago.

See, here’s the thing. If you aren’t familiar with the state of Alabama when a snowflake hits the ground. I’ll fill you in.

Upon immediate forecasting of anything in the vicinity of snow. schools close, businesses close, after school activities are cancelled and everybody goes out and buys milk, bread and ground beef. I have no idea why, but this is what disappears from all stores every single time. It happens usually once or twice a year, although we have skipped a year here and there.

This time, however, was NOT a flake of snow.

Although a flake of snow was forecasted, what we got was stuck – wherever we were when the flurries started – and gridlocked interstates. It wasn’t just snow, it was mainly ice and lots of it. Only the cars with excellent tires driven by people that knew how to navigate winter roads were able to get anywhere,

Being a critical care nurse, I didn’t have the option to go home even though my husband was able to get to the hospital to pick me up. The oncoming nurses weren’t able to make it so the ones that were there had to stay. It was definitely a storm that many of us will remember for years.

These waffles are perfect for that kind of weather.

I made these in my waffle iron, which does make the traditional waffle shape, but I cut them into fourths and then into sticks which makes them easier to dip.

You could always drizzle the marshmallow dip over the waffles if you want to eat them with a fork.

Hot Chocolate Waffles with Marshmallow Dip

Hot chocolate flavored waffles with warm marshmallow cream for dunking - perfect for cold days alongside a cup of hot cocoa!

Ingredients

  • 1 cups all purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup hot chocolate (or cocoa, whichever you call it) powder (I recommend making one waffle and tasting to adjust - you may want to add more)
  • 2 large eggs
  • 1 1/2 cup whole milk
  • 2 tbsp vegetable oil
  • Non stick spray
  • 2 cups marshmallows
  • 1 1/2 cups heavy cream

Instructions

  1. In the bowl of a stand mixer, stir the flour, baking powder, baking soda, hot chocolate powder and salt together.
  2. In a separate bowl, whisk together the eggs, milk and oil; add to flour mixture.
  3. Mix on low for a minute or two, until thoroughly combined.
  4. Combine marshmallows and cream in a glass mixing bowl and microwave for 30 seconds at a time, stirring in between, until marshmallows have melted.
  5. Spray a hot waffle iron with nonstick spray.
  6. Add about 1/2 cup to the waffle iron at a time and cook for about 3-5 minutes until done.
  7. Serve with marshmallow dip.
