French Dip Mac ‘N Cheese Smothered French Fries

French Dip Mac ‘N Cheese Smothered French Fries will prove that food can be more than just sustenance. It can be an experience. These fries pack in so much flavor, they’re definitely brag worthy.

Just a few days ago I posted my Crock Pot French Dips in my 7 Quart Cast Aluminum All-Clad slow cooker (I’m pretty much obsessed with this thing, BTW).

The French Dips are so good, and such a fantastic weeknight dinner. We had enough leftovers for lunch the next day and STILL had more.

As a matter of fact, it was so good I just couldn’t let it go to waste.

How Did French Dip Mac ‘N Cheese Smothered French Fries Happen??

I made the slow cooker French Dips a couple of days prior, so I had a good bit of the leftover slow cooked French Dip beef. We had just made leftovers from it that day, so I felt sure nobody cared if I reinvented them.

I knew I was going to be making a batch of macaroni and cheese, and I instantly thought French Dip Mac ‘n Cheese would be fantastic.

I’m a sucker for savory on savory.

Now as if that wasn’t insanity enough, I made the decision to pour it over crispy french fries, of course.

I made the mac and cheese, stirred in the beef and then I added just enough of the au jus to completely moisten it and give it a good French Dip taste.

I didn’t want to mask the cheesiness, just add to the flavor by throwing a different profile in the mix.

I promise you, I was not out to create a crazy dish designed to make everyone obese with cholesterol problems and a ticket to the cath lab.

Indulging every now and then isn’t terrible. Everything in moderation…

Now, please do NOT forget the bacon on top. The creamy mac ‘n cheese and tender French dip beef is SOOOO good with the contrast of crispy bacon.

It really the contrast It just really rounds the whole gluttonous/sinful/beautiful mess out.

I think next time I’m gonna dip them in Ranch dressing.

I know, it’s adding gluttony to gluttony. But if I’m going as far as making French Dip macaroni and cheese covered french fries, why not dip them in Ranch?

A spicy ranch would be good, too.

However, they’re absolutely off the charts delicious without them, so I’m good without anything.

French Dip Mac 'N Cheese Smothered French Fries

Yield: 4 servings
Prep Time: 20 minutes
Cook Time: 10 minutes
Total Time: 30 minutes

The ULTIMATE in party food - French Dip tender beef and creamy macaroni and cheese smothering thick cut french fries, topped with crispy bacon.

Ingredients

  • 1 package shell macaroni and cheese (I used Velveeta)
  • 1 cup shredded cheddar cheese
  • 1/4 cup milk
  • Leftover shredded beef, with a few tablespoons of au jus (I had about 4 cups)
  • 2 potatoes, cut into 1/2 inch wide strips (put them into a bowl filled with cold water as you cut them)
  • Canola oil
  • Salt and pepper
  • 4 strips bacon, cooked and crumbled
  • Fresh flat leaf parsley, roughly chopped

Instructions

  1. Prepare macaroni and cheese according to package directions and while hot, add shredded cheese and milk, combine until melted.
  2. Add shredded beef, adding au jus to taste.
  3. Drain the fries and dry completely.
  4. Heat the oil in a large sauce pan or dutch oven to 375°.
  5. Fry potatoes in batches, until slightly brown and crispy. Drain on paper towels and salt and pepper to taste.
  6. Preheat oven to 400°.
  7. In a small casserole dish (or au gratin) arrange french fries, top with macaroni and cheese, then bacon.
  8. Bake until bubbly, about 3-5 minutes.
    Top with parsley and serve.
