This Caprese Dip is that seductive. What can I say.
This is one of the best (not to mention easy) things you’ll make this season. It’s just three ingredients – fresh Mozzarella cheese, fresh basil leaves and chopped tomatoes. I actually used canned petite diced tomatoes (don’t judge), but I’m sure fresh tomatoes would be even better.
I definitely have an affinity for the tomato and cheese combination – this morning for breakfast I had a Monterey jack, pickled jalapeno and tomato (fresh) grilled cheese. In the moment it was the most exquisite thing I had ever tasted. Of course that’s dramatic, but I was starving. I would still have to say it was amazing.
We scooped this up with pita chips, which was perfect, but you could also pile this on crusty french bread or dip with your favorite crackers.
Remember when I made these Caprese Egg Rolls? I have a feeling a little of the balsamic dip I made for them would be really good drizzled on top of this; I’ll have to try that next time.

Ingredients
- 12-16 oz fresh Mozzarella cheese
- 1 15 oz can petite diced tomatoes (or a pint of grape tomatoes)
- 1 bunch fresh basil leaves, chopped
- Crackers, fresh bread or pita chips for dipping
Instructions
- Preheat oven to 375.
- Spray a glass baking dish with nonstick spray and add cheese, tomatoes and basil.
- Bake for 15-20 minutes, until bubbly.
