Blondies with Nutella Middles

Because Easter is coming up, I thought I would break out a sweet for y’all.  I know, it’s rare for me.  My children and husband all have extreme sweet teeth.  Honestly, extreme doesn’t even describe it.

They hide things from eachother.  Not joking….the kids hide things in crazy places from one another and – God love him – my husband hides things too.  Only because he knows between the two kids cookies/candy disappear very quickly in this house.  I just don’t understand it.  I don’t care a thing about sweets.

And I laugh when I hear one of them when they see the other one eating what they hid….”WHAT!!!???? I hid that!!”.

Although, it is kinda funny that when we’re running low on Diet Coke I mysteriously find one hidden in the crisper when I get up in the morning looking for one.

Hmmm…..how did that happen?  😉

Blondies with Nutella Middles

1 cup all-purpose flour

1 stick unsalted butter, softened to room temp

1/2 tsp salt

1 egg

1 cup light brown sugar

1 1/2 tsp vanilla

3 1/2 inch Glad foil baking cups

Nutella – I probably used 3/4 to 1 cup

Preheat oven to 350°.  Line a muffin pan with baking cups.

In a large mixing bowl, combine the flour and salt, set aside.  Mix together the butter and sugar until creamy, then add egg and vanilla. With the mixer on, add the flour and salt mixture a little at a time until thoroughly combined.

It should look like this….

Microwave the Nutella on 50% power 30 seconds at a time, stirring in between, until melted…about 1-2 minutes.

Add about 3 tbsp of the batter to each of the baking cups.  Then, add a big spoonful (probably a tbsp) of Nutella on top of the batter.

Add another 3 tbsp of batter on top.  Bake for 20-25 minutes, or until set.  Mine were just starting to get golden brown when I took them out of the oven.  Let them cool for at least 10 minutes before removing the foils.

Next time, I’m adding chocolate chips to the batter.

Enjoy!
