Beer Can Chicken

Is this a “man thing”?  Stuffing a can of beer in a chicken and grilling it?

No, I don’t think so.  

I’m sure my brother would say otherwise, but I enjoy this shit too much.  He and I have an unspoken ongoing never ending competition when it comes to food, BUT I do have to say he is damn good in the kitchen/grill that I rarely argue anything I do is better.  I’ve asked him a hundred times to let me see his recipes. I always get a “I will, I will”, but so far nothing. I don’t think he has anything written down; but that’s the way a lot of foodies are. I guess he doesn’t think about the fact that he has been coming over and cooking in my kitchen for a long time, and when he is, I watch what he does with his marinades.

He definitely has an affinity for cooking like I do, but his way is so different than mine. Once I can convince him to take the time to let me have the measurements of some of his stuff, especially his ribs, you will love me for it.  The ribs…. I swear his ribs are to die for, and butter has a lot to do with it.

Since I suddenly one day discovered a true love for the grill, and OMG smoking, I want to smoke the shit out of  anything and everything. I don’t know what it is but I just love it -maybe it’s because it takes place outside and it’s a very summery thing, it’s a slow process, and I love the results after a long smoke. And I’m a very summery girl.

This is a lemon pepper beer can chicken I did. Same method, different spices.

Get Her Ready:

The grill needs to be prepared for indirect heat on medium heat.  This means that it will cook beside the flames, not directly over them.  So, for example, if you’re using a gas grill heat only one side of the burners.

In a small bowl, combine the olive oil and all seasonings. You will have to use your hands for this – rub the mixture all over the chicken, getting under the skin as much as you can.  Use it all!

Sit Her on a Can:

Lower the chicken, with the cavity side down, onto the beer can.

Place on the side of the grill that isn’t over direct heat. Cover, but try not to open it.  I do check mine after about an hour, but it’s best to mostly leave it alone.

Melt the stick of butter in the microwave.  After about an hour, quickly open the grill and evenly pour the butter over the chicken, then close the grill cover.

It should be done after about 1 – 1/2 hours or until breast meat registers 180 on a meat thermometer.

Prep Time: 15 minutes
Cook Time: 1 hour 30 minutes
Total Time: 1 hour 45 minutes

Ingredients

  • 1 3-4 pound chicken, rinsed with cold water and with neck/giblets removed
  • 1 can of beer, but pour out about half
  • 3 tbsp olive oil
  • 1 tbsp Oregano
  • 1 tbsp dried Basil
  • 1 tbsp dried Tarragon
  • 1 tbsp Lemon Pepper seasoning
  • 1 tbsp Seasoned salt
  • 1/2 cup of real butter

Instructions

  1. Light grill to medium heat, only one side if you have two burners.
  2. In a small bowl, combine the olive oil and all seasonings.
  3. Rub the mixture all over the chicken, getting under the skin as much as you can. Use it all!
  4. Lower the chicken, with the cavity side down, onto the beer can.  
  5. Place on the side of the grill that isn’t over direct heat.
  6. After about an hour, melt the stick of butter in the microwave. Quickly open the grill and inject the butter over the chicken, close the grill cover.
  7. Grill for 1 – 1/2 hours or until breast meat registers 165 on a meat thermometer.

Notes

*If you only have one burner, try to cook it over indirect as much as you can. It will be fine if you can't - just turn the heat down to medium low.
