Buffalo Chicken Crostini with Bacon

So, this may seem extreme.

But it’s so not.

I’m trying to think of how to explain these to you.

Yes, it’s a dip, it’s kinda, maybe a little hot and has chicken and buffalo sauce… Oh, and I added bacon. But I made them into neat little crostinis.

Aren’t they cute? I absolutely love buffalo chicken, I love blue cheese…hell I love it all.

The chicken, cheese, cream cheese, etc. all together may or may not be over the top, especially depending on how much blue cheese you throw in there (and how much you like blue cheese). Because you could definitely throw in a profane amount, which I would not disagree with.

I would cheer you on.

Don’t wuss out in that area. Blue cheese can be life altering.

Does that sound dramatic? Maybe it does. However if you haven’t had blue cheese in your life it’s time to change that. If you happen to be one of those people that claim to be blue cheese haters – just be a team player here and TRY IT.

I have a feeling this time you’ll be hooked. Just sayin’.

With these, eating one is not enough.

Buffalo Chicken Crostini with Bacon

Ingredients

  • 8 oz cream cheese
  • 1/2 cup Moore's Buffalo Sauce
  • 1/3 cup blue cheese, crumbled
  • 1/2 cup shredded rotisserie chicken
  • 1/4 cup Monterey jack cheese, shredded
  • 1/4 cup sour cream
  • 4 slices bacon, cooked and crumbled
  • Crusty French bread, sliced
  • Fresh parsley, chopped

Instructions

  • Preheat oven to 350 degrees.
  • Combine cream cheese through sour cream.
  • Bake for 30 minutes.
  • Top with crumbled bacon.
  • Top baked bread slices with hot dip, sprinkle with parsley.

    I’ve had buffalo chicken dip (referred to in my family as “chicken crack”, horrible nickname, but it is a pretty addictive dip). Anyway, I love the idea of adding bacon and putting it on a crostini. It’s so much more fancy than eating out it of the pan with a spoon!
