Bacon Blue Cheese Buffalo Guacamole is seriously one of the best impromptu recipes I’ve made in a very long time. It’s definitely a myriad of flavors, but none of them gets lost on the palate.

Holy.

Lord.

Not sure how to describe to you just how incredible this stuff tastes.

It’s like a beautiful psychotic food party in your mouth.

So, it started out innocent, I promise, I didn’t set out to get crazy.

And This is How Bacon Blue Cheese Buffalo Guacamole Happened

I was just making some dip for an appetizer before a little dinner get together, so I made my typical guacamole.

Then I decided it would be fun to add some leftover bacon that screamed at me every time I opened the fridge.

Apparently food talks to me.

Next thing I knew I was throwing blue cheese in it.

What a damn good idea…

The blue cheese led to buffalo sauce, which just so happened to bring all the flavors home, and it became complete harmonious guacamole deliciousness.

Or something along those lines.

Then I threw in chopped onions and tomatoes.

You know, just for shits and giggles.

I literally couldn’t stop eating it…and so now my mouth is burning.

In a good way.

No, really, I like the burn.

A good, full of flavor, not-really-on-fire burn.

Bacon Blue Cheese Buffalo Guacamole

Prep Time: 20 minutes
Total Time: 20 minutes

Ingredients

  • 1 avocado, ripe, mashed
  • 3/4 cup salsa or pico de gallo
  • 1/3 cup lime juice
  • 1 handful fresh cilantro, chopped
  • 1/2 cup blue cheese crumbles
  • 5 strips bacon, cooked, crumbled
  • Buffalo hot sauce, to drizzle (or drench)
  • Tomatoes, chopped
  • Red onion, chopped

Instructions

Combine everything except buffalo sauce.
Drizzle with buffalo sauce and serve with tortilla chips.
Top with tomatoes and onions.
